Within these boundaries are definable regions in which certain customs, history, and shared views help define an identity and cohesion. In many cases, the pattern of settlement and immigration has influenced the culinary culture of Brazil. This book explores the role that food and cuisine play in the construction of identity on both the regional and national levels in Brazil through key case examples. It explores the way in which food has become an important element in attracting tourists to a region as well as a way of making aspects of a culture known beyond its borders as cookbooks, ingredients and restaurants move outward in our globalized world.

Abstract Practice is a methodological and theoretical frame for investigating the relations betwe... more Abstract Practice is a methodological and theoretical frame for investigating the relations between social individuals and the social and cultural milieux in which they live and work. ‘Practice’ is activity performed to produce an effect that is known or envisioned in advance by the performer. Practice is not the rote reproduction of social and cultural life. Praxis, rather than practice, offers a new dimension by examining how individuals are socialized into the roles and practices of their environment but also adapt the practices they have learned to the situations they confront. Such a perspective recognizes social and cultural change. Practice theory enables a dynamic and complex analysis of multiple social and cultural situations.

Ces facteurs sont illustres ici par la competition que se livrent deux Etats, Bahia et Espirito Santo, au sujet de l’elaboration de la meilleure moqueca. Le gout du plat est finalement bien moins important que les valeurs attribuees a la religion, la culture, la « race » et la classe sociale. Le plat est en fait porteur des qualites de ceux qui le preparent et du contexte dans lequel il est elabore et servi.

A competicao nao esta apenas associada ao gosto desta especialidade, mas tambem aos valores religiosos, culturais, raciais e de classe a ela associados. Sao incorporadas as qualidades de quem prepara e o contexto no qual e preparada e servida a moqueca.

This article proposes a new way of examining emotions in a series of hierarchical contexts. Auton... more This article proposes a new way of examining emotions in a series of hierarchical contexts. Autonomy and relatedness form a set of emotional stances and behavioral interactions. Relatedness is often associated with emotional fields such as caring, nurture and love, whereas autonomy is not usually classified as an emotion. This article examines them as parts of a dialectical and hierarchical pattern of interaction. Autonomy and relatedness can be viewed as social sentiments which work as manifestations of individual behavior, the structure of relations between individuals, cultural patterns between sets of individuals, such as age and gender groups, and finally as qualities which characterize whole societies or communities in their relations with others. By looking at emotions as part of a dynamic set of processes, the article examines how action creates both individual and cultural expectations and practices. The article uses Turner’s concepts of dialectics and hierarchy to examine social and cultural values and activities.
Brazilian foods are tied up with race and class, ethnicity and heritage. Particular ingredients a... more Brazilian foods are tied up with race and class, ethnicity and heritage. Particular ingredients and modes of preparation are an intrinsic part of the identity of regional foods and by association with the people who consume them. What appears to be a gastronomic distinction may obscure a value system of prejudice and bias. Are the African ingredients so valued in one cuisine seen as a liability in another? Are staple ingredients such as farinha recognized as having indigenous origins? As some of these ingredients and cuisines are exported (both to other parts of Brazil and abroad), they gain a renown (or notoriety) outside of their regions of origin. My research examines the meanings and values that such foods and dishes have in their regional context and determines if the meanings and values of the food change as the cuisines become known outside. Food styles and cuisines are also significant factors in tourism. In an increasingly global society, tourists and natives use food to overcome the distances between them in some contexts while simultaneously drawing these distinctions in others. So I further examine how food plays into the identity and attractiveness of a region as a tourist destination.
