Abstract
Food safety management (FSM) has drawn attention recently, specifically after COVID-19 outbreak, due to lack of supervision in food products delivery chain. To address this issue, we propose a lightning network-blockchain FSM system. Our approach guarantees data authenticity by utilizing the technical characteristics of blockchain (e.g., tamper-resistant and traceability). We use lightning network to solve the throughput bottleneck issue in order to enable the proposed scheme adoptable in practice. The prototype of our approach has been evaluated and examined in our study.
