Just Salad is a chain of fast casual restaurants[1][2] that primarily specializes in salads, wraps and warm bowls. The brand serves accessible, plant-centric meals made with homemade dressings, prepped-daily produce and from-scratch recipes.[3] Empowering customers to "Eat with Purpose," Just Salad is the first U.S. restaurant chain to carbon label its menu.[4][5]

History

The company was founded in 2006 by Nick Kenner and Rob Crespi.[6]

The first location opened at 320 Park Avenue in New York City in 2006. Today, the company operates over 80 store locations, primarily in the United States, [7][8][9] including New York, New Jersey, Connecticut, Florida, Illinois, Pennsylvania, and Massachusetts.[5][10][11]

Sustainability

Just Salad promotes environmental sustainability through various initiatives.[12] In 2019, Sandra Noonan joined the company as Chief Sustainability Officer.[13][14][15][16] In 2020, Just Salad became the first U.S. restaurant chain to carbon label its menu, verified by Planet FWD, which informs customers about the greenhouse gas emissions associated with each menu item.[13][15][12]

The company offers a Reusable Bowl Program, which allows customers to purchase a bowl in-store and receive a free salad topping with every reuse.[17][7][15] The program in partnership with the New York State Pollution Prevention Institute at Rochester Institute of Technology, has kept over three tons of waste out of landfills as of 2021.[13][16] Just Salad achieved B Corp Certification in April 2023 with an 80.4 B Impact Score.[3][4]

Just Salad offers a vegan smoothie menu and plant-based alternatives like Beyond™ Chicken and Violife Creamy Vegan Feta.[18][9] The company’s mobile app requires customers to opt-in to receive utensils when they order using the Just Salad Mobile App[19] and features a "Climatarian" dietary filter that displays the lowest-footprint menu items.[14][15][3][12] Pickup orders are placed on stations without bags for single-item orders, and customers ordering in-store are offered bags upon request.[20] Just Salad implements waste reduction policies such as in-store composting, food donation programs, and surplus food sales through the Too Good to Go app.[13][16]
