As it turns out, meat consumption contributes more

many people in the world and global populations
on the rise, isn’t it time we started to consider our
individual carbon footprint? How does my lifestyle
affect the world… and my children’s world? At San-
dos Caracol, we have spent years trying to be more
efficient and pollute less. Compared to five years
ago, today, we are emitting about 17,000 TONS less
of CO2 every year!
When it comes to how we make our food and
what we eat, meat consumption is among the most
inefficient use of resources in the world, as well as
being the most destructive to the environment. Did
you know that 56% of fresh water in the USA is used
for growing livestock feed, yet every year fresh wa-
ter is more scarce and droughts more common? In
Europe, 80% of livestock feed is imported because
they only have enough agriculture to feed 20% of
their livestock. Even more shocking for many peo-
ple to learn is that 30% of the entire land surface on
the planet is used for livestock production and is the
main reason for global deforestation, as old forests
are cut down for livestock to take over.
If you have ever thought about saving water, you
may want to consider that the water needed to pro-
duce ten hamburgers is equivalent to an entire year’s
supply of showers. Yet 1.5 billion people in the world
do not have access to fresh water. Every pound of
meat produced requires 600 liters of water. That’s
the equivalent of everyone at Sandos Caracol drin-
king one bottle of water - for one pound of beef!
At Salvia we offer what we love to call Eco Food:
food that is produced with the most efficient use of
resources and with the least environmental impact.
This means that you will not find any animal protein
on the menu, but you will find nutrition-packed natu-
ral superfoods like quinoa, a variety of nuts, sprouts,
tofu, lentils, etc. However, just because there is no
animal protein does not mean it costs less to produ-
ce. The money we do not spend on animal protein
means we can buy all these quality superfoods that
