Fermented cereal paste from maize, millets, and sorghum grains are significant food for young children. Thus, the study focuses on food fortification using orange-fleshed sweet potato (OFSP) as fortifier as studies have confirmed the presence of nutrients that can help meet the Vitamin A dietary requirement. The cereals were soaked ambient temperature (27 ± 1°C) for 72 hours and were blended with OFSP (90:10, 80:20, 70:30, 60:40, 50:50), and the formulated products were studied for Vitamin A, β-carotene, proximate composition, physicochemical, functional properties, and storage. The aim of this study was to evaluate the effect of air temperature (50, 60, and 70°C), air velocity (0.5, 1, and 1.5 m/s), and slice thickness (3, 6, and 9 mm) on the moisture ratio of yam slice during drying. Ten (10) different empirical models were used in fitting the experimental moisture ratio data, the prediction performance was evaluated with sum of square error (SSE), coefficient of determination (R2) and root mean square error (RMSE). The model fitting shows that the Two term model was most performed based on R2, SSE, and RMSE value. This result can be use to control the drying systems for yam slice.

This research investigated the effect of fermented walnut supplemented diet on cadmium-induced toxicity in the liver and brain of rats. Twenty male Wistar rats were divided into four groups of five animals each weighing between 90-140 g. Group 1 received 5 mg/kg body weight cadmium chloride (CdCl2) and normal rat feed. Group 2 received a normal rat diet while groups 3 and 4 received 5 mg/kg body weight of cadmium chloride, and 5% and 10% walnut supplemented feed respectively. Cadmium (Cd) was administered daily for 6 weeks by oral intubation. Rats were sacrificed 24 hrs after the final treatment. Cd exposure elicited increased activities of Acetylcholinesterase, Superoxide dismutase, Catalase as well as elevated Glutathione levels. Hence, this study was designed to investigate the antinutrient content and antioxidant property of five different varieties of raw and cooked P. tetragonolobus. The varieties studied included, the indigenous variety (designated local) and four improved varieties (designated: T11, T31, T125, T154). Antinutrients like phenolic, tannin, glycoside and phytate concentrations were determined using standard methods while 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay was carried out to ascertain the antioxidant activity. Phytate, cyanogenic glycosides and tannin levels were significantly (p<0.05) reduced due to cooking in T11 variety.
