Apensar das melhorias na cadeia de produção da carne de frango, a carne ainda é passível de contaminação por este patógeno, que encontra no trato digestório das aves, seu habitat natural. O resfriamento da carne não provoca injúrias à Salmonella, contudo, com o congelamento, espera-se a redução ou a ausência de células bacterianas viáveis. O objetivo desse trabalho foi avaliar a presença de Salmonella spp. em cortes de frango congelados, comercializados no varejo. Foram coletadas 14 amostras de cortes de frango com pele, preferencialmente asas, de 14 marcas produzidas nos Estados de Santa Catarina, Rio Grande do Sul e Paraná, e comercializadas no minicípio de Joaçaba, SC. A producao de queijo e fruto de um saber-fazer secular e um produto caracteristico da regiao do Vale do Rio do Peixe, criando espacos de trabalho e sociais, produzindo e reproduzindo valores e significados. E nesse contexto que, neste trabalho, teve-se por finalidade descrever o processo de fabricacao do queijo colonial produzido por agricultores familiares na regiao do Baixo Vale do Rio do Peixe, SC. A descricao do processo e a primeira etapa da Analise de Perigos e Pontos Criticos de Controle. No periodo de fevereiro a outubro de 2014, foram visitados cinco proprietarios rurais dos Municipios de Ouro, Campos Novos e Presidente Castello Branco. A salmonelose esta entre as zoonoses mais importantes do mundo, apontada como agente causador de ... more A salmonelose esta entre as zoonoses mais importantes do mundo, apontada como agente causador de surtos em muitos paises apresentando alta endemicidade, elevada morbidade e tambem e dificil adotar medidas de controle. O objetivo desse trabalho foi realizar uma revisao de literatura sobre os surtos de salmonelose relatados no Brasil nos ultimos 18 anos. Atraves de dados publicados pelo Ministerio da Saude. No Brasil, entre 1999 e 2004 o Ministerio da Saude, atraves da implantacao do programa de Vigilância Epidemiologica das Doencas Transmitidas por Alimentos (VE-DTA), registou 186.776 surtos por Salmonella spp. sendo os estados com maior numero de notificacoes foram Sao Paulo, Parana e Rio Grande do Sul. Segundo o Ministerio da Saude a Salmonella e o agente etiologico com maior frequencia, presente em 38,2% dos surtos alimentares de 2000 a 2014. Salmonella spp. are Gram-negative bacilli from the family Enterobacteriaceae, they are widely dis... more Salmonella spp. are Gram-negative bacilli from the family Enterobacteriaceae, they are widely distributed in nature and survive in the intestinal tract of birds, reptiles and mammals, as well as in humans. They are recognized as important zoonotic agents and for causing food borne illnesses around the world. The main infection route is fecal-oral and contaminated food and water are considered the main agents that bear this microorganism; however, contamination from contact with contaminated animals is also considerable. The present study had the objective of evaluating the presence of Salmonella sp. in feces of asymptomatic dogs in the Municipality of Lacerdópolis -Santa Catarina. Swabs were used to collect 40 feces samples. The protocol used for the analysis was based on the International Standart Organization ISO 6579:2002 and ISO 6579:2007 norms for the research of Salmonella, for which the methodology was adapted for fecal swab analysis.
