The behavior of the oils was analysed on their contents of polar compounds, minor glyceridic compounds, triglyceride composition, induction time at 100oC and a -tocopherol levels. The results indicated lower polar compounds contents in high oleic sunflower oil than in normal sunflower oil. The results also showed an increase on total polar compounds mainly related on high molecular weight compounds, polymers, dimers and oxidized triglycerides monomers as thermal and oxidative reaction products. In contrast, the contents of diglycerides and free fatty acids, indicatives of the hydrolytic alteration, remain constant, once there was no moisture in the medium. The official method of determination (AOCS Ca 5a-40, 2004) is based on titration, using phenolphthalein as an indicator. For crude and degummed oils, the titration end point is difficult to be observed due to the high level of pigments, resulting in dark solutions. The production of ethyl esters by alcoholysis is an alternative for splitting triacylglycerols du... more The production of ethyl esters by alcoholysis is an alternative for splitting triacylglycerols due to the possibility of using low temperatures, which results in oxidative protection of the polyunsaturated fatty acids. Ethyl esters produced under mild conditions of temperature could be used as substrate for obtaining structured lipids. The reaction parameters of production of ethyl esters from fish oil with high content of omega-3 fatty acids by alcoholysis were optimized using response surface methodology. An experimental design (2³) (with levels +1 and -1, six axial points with levels -alpha and +alpha and three central points) was applied. The variables investigated were concentration of catalyst, amount of ethyl alcohol and temperature. Ethyl ester conversion was monitored by high performance size exclusion chromatography (HPSEC) and the best result obtained was 95% conversion rate. Embutidos fermentados tipo salame foram formulados, com diferentes proporções de carne suína e ca... more Embutidos fermentados tipo salame foram formulados, com diferentes proporções de carne suína e carne caprina, visando o aproveitamento da carne de caprinos na forma de produto processado. A influência das diferentes formulações na evolução do pH e atividade de água (Aw) foi avaliada. Os produtos finais obtidos foram caracterizados quanto ao teor de gordura, proteína e umidade. Paralelamente, foram realizadas análises microbiológicas e de aceitação sensorial (mediante escala hedônica de 9 pontos). A incorporação de carne de caprinos nas formulações influenciou os valores finais de pH e Aw. Comparados com amostra comercial, os embutidos fermentados de carne suína/carne caprina apresentaram valores similares de gordura, enquanto que a umidade foi mais elevada para os produtos formulados. Foram testadas culturas comerciais contendo 1. Staphylococcus xylosus e Pediococcus pentosaceus; 2. mistura 50:50 de duas cepas de Pediococcus sp. e 3. Lactobacillus farciminis, Staphylococcus xylosus e Staphylococcus carnosus. O objetivo deste trabalho foi verificar o efeito da adição de diferentes teores de gordura (5, 10... more O objetivo deste trabalho foi verificar o efeito da adição de diferentes teores de gordura (5, 10 e 20%) no processamento, características químicas e aceitação sensorial do embutido fermentado de carne de caprinos. Durante o processamento, foram monitorados o pH e a atividade da água. Nos produtos finais, foram determinadas a umidade, a proteína e a gordura, bem como a aceitação sensorial, por meio de escala hedônica. As médias finais de pH e a atividade de água, na faixa de 5,07 a 5,14 e 0,897 a 0,923, respectivamente, não apresentaram diferença significativa (P>0,05) entre os tratamentos. Os atributos sensoriais estudados não apresentaram diferenças significativas (P>0,05). The paper presents a study on the effect of a treatment of steers with a single oral dose of soyb... more The paper presents a study on the effect of a treatment of steers with a single oral dose of soybean oil deodorizer distillate (SODD) on the α- and γ-tocopherol blood plasma concentrations. SODD containing 1.95% of α-tocopherol and 8.45% of γ-tocopherol in doses of 0.75, 1.50 or 2.25g/kg live weight was used on nine 2-year-old Nelore (Bos indicus) steers to promote increases in the plasma concentration of vitamin E. Tocopherol analyses were performed by HPLC on a C18 column, using a UV detector. The results showed that a single oral treatment of steers with SODD produces significant increases in plasma α- and γ-tocopherol levels. The vitamin E content was increased up to four times the initial content, showing the high capacity of SODD as a source of vitamin E for bovines in a single oral dose with the objective of increasing vitamin E blood plasma concentrations and, consequently, the levels in the tissues, as well.
