The acceptability, consumption frequency of fruits and vegetables (F&V), and the reasons for cons... more The acceptability, consumption frequency of fruits and vegetables (F&V), and the reasons for consuming these foods were studied. A total of 370 housewives carried out different tests: Sensory Acceptability, Consumption Frequency, Free Listing (FL), and Check All That Apply (CATA). In these tests, the household income (HI) of the housewives was considered. Of the 25 fruits and 27 vegetables included in the acceptability test, more than 40% had average values greater than or equal to 7 for both HI, low income (LI) and middle income (MI). In general, F&V had more mentions in low consumption frequency categories. Only the consumption frequency of three fruits and two vegetables was influenced by HI. The acceptability patterns in both foods do not always correspond to their frequency of consumption. A raíz del Aislamiento Social Preventivo Obligatorio (ASPO) debido a la pandemia por COVID-19, su... more A raíz del Aislamiento Social Preventivo Obligatorio (ASPO) debido a la pandemia por COVID-19, surgió la necesidad de indagar acerca de los cambios en la alimentación, actividad física y otros hábitos generales que pueda haber experimentado la población de 9 de Julio (Buenos Aires-Argentina), que cuenta con 45.000 habitantes. Se realizó una encuesta online en mayo 2020, diseñada en Google drive. En el diseño se utilizaron preguntas abiertas, cerradas y frases con escalas "Likert". Se investigaron características sociodemográficas, lugar de realización de compras, frecuencia de consumo de alimentos: panificados/pastas, grasas/aceites, frutas/verduras, lácteos, carnes, etc. Se consultó sobre tipo de alimentación, dietas, actividad física, etc. (antes y durante el ASPO). Se presentaron frases (alimento/economía/dieta/emociones) con escalas "Likert" y una pregunta abierta para colocar las primeras palabras/frases que les surgieran asociadas al ASPO. Se obtuvieron 287 respuestas. El rango de edad de los encuestados fue de 20 a 70 años. El 82 % de las encuestas fueron realizadas por mujeres y el 80 % tiene estudios secundarios completos, con un nivel socioeconómico medio. Entre los resultados más relevantes se encuentra que el 69% consideró tener durante el ASPO una situación financiera peor que antes y disminuyó la frecuencia de salidas a realizar las compras. Aumentó el consumo de pasta/panificados. El 70% estuvo totalmente de acuerdo con la frase "Siempre creí que lo ideal es comer de todo en forma moderada". El 70% llevaba una dieta saludable antes del ASPO, ese porcentaje bajó un 10% y un 13% dejó de hacer actividad física. Las razones más mencionadas por las que realizaban actividad física en general fueron: "salud física" y "salud mental", esta última aumentó durante el ASPO. Las actividades más mencionadas, realizadas durante el ASPO fueron: limpiar la casa, cocinar, mirar televisión, series y/o películas. Las frases/conceptos más mencionadas asociados al ASPO fueron: que termine, normalidad, cambios individuales y sociales, extrañar, preocupación económica e incertidumbre. For food choice 23 motives were considered, using a Best–Worse questionnaire. Regarding emotions, respondents checked all-that-applied of 33 emotions for 6 emblematic foods. Results were analyzed by generalized linear models and correspondence analysis. While differences between cities were small, differences between income levels were important.

The aims of this research were 1) to study the children´s drawings to obtain scientific informati... more The aims of this research were 1) to study the children´s drawings to obtain scientific information about food consumption; 2) to compare this method with an existing one (Free Listing); and 3) to compare fruits- and vegetables-consumed by children of different cultural groups within a same country. Children (n=105) from two Argentinian cities (Salta in the northwest and 9 de Julio in the Pampean region), reported the fruits and vegetables they consumed, with the Free Listing and the new Free Drawing methods. Contingency tables were built and cognitive saliency indexes (CSI) were calculated. Children evoked 57 fruits and 54 vegetables by both methods, which were then grouped into 31 fruit and 27 vegetable categories. The advantages and limitations of the methods are discussed. Throughout Free Drawing, each food was defined by its name, shape and colour, which allowed better discrimination between varieties. Background: Food fortification is an effective strategy that has been recommended for improving p... more Background: Food fortification is an effective strategy that has been recommended for improving population calcium inadequate intakes. Increasing calcium concentration of water has been proposed as a possible strategy to improve calcium intake. The objective of this study was to determine the sensory threshold of different calcium salts added to drinking water using survival analysis. Methods: We performed the triangle test methodology for samples of water with added calcium using three different calcium salts: calcium chloride, calcium gluconate and calcium lactate. For each salt, a panel of 54 consumers tested seven batches of three water samples. Data were adjusted for chance and sensory threshold was estimated using the survival methodology and a discrimination of 50%. Desarrollar metodología para medir la aceptabilidad sensorial de alimentos en poblaciones que reciben PSN. Capitulo II Optimizar sensorialmente galletitas dulces elaboradas con diferentes concentraciones de harina integral de amaranto (HIA). Capitulo III Estudiar el comportamiento de una galletita elaborada con HIA, en distintas condiciones de almacenamiento.
