In our present study it has been used for palm wine production. Using a batch fermentation process, Saccharomyces cerevisiae (NCIM 3045) was cultivated in palm juice and different physical parameters such as temperature, pH and time have been varied to maximize the yield of wine. The fermentation process was standardized by statistical methods. Response surface methodology (RSM) based on the 23 factorial central composite design (CCD) was applied to determine the optimum conditions for the maximum yield of ethanol with the variation of temperature and pH. The highest yield of ethanol concentration of was obtained at 32 0 C and pH 5.5 after 48 h of fermentation. Hence it is only natural that the Indian cuisine would have a number of milk based desserts. Rasgulla is one such sweet dish based on coagulated milk protein, locally known as chhana. This East Indian dessert enjoys widespread popularity all over the country not only for its delicious taste but also for the rich nutritional constituents. The health benefits of Rasgulla can be further enhanced by the addition of pineapple (Ananas comosus) powder. Pineapple is a rich source of vitamin C and malic acid and it also has beneficial effects on the digestive system. Hence pineapple powder forms an appropriate choice for enrichment of Rasgulla. However the nutritional enrichments become futile if the taste is compromised. Therefore sensory evaluation is performed in order to ensure the marketability of the product. However traditional sensory evaluation has the serious limitation of subjectivity. It depends strongly on the individual preferences of the panelists. In order to remove this subjectivity fuzzy logic analysis is used. Fuzzy logic is used to mathematically modify the sensory scores given to each sample for each parameter (colour, flavor, taste, mouth feel) and thereby obtain comparable scores. These final scores are used to rank each of the Rasgullas containing different amounts of pineapple powder.

Considering recent trends in producing ready to eat snack with herbal flavor, Rice, Chapra (Fenneropeaneaus indicus) mixture powder were extruded with Aswagandha powder (Withania sominifera) for value addition by a co-rotating fully intermeshing twinscrew extruder. The extrudates were studied and characterized in respect of expansion ratio, shear stress, shear strength,acceptability, density, viscosity, micro-structural property as well as retention of antioxidant property. Acceptable product with high expansion ratio lower density and shear stress was obtained at 135 C and 15% processs moisture condition. Viscosity of extrudate shows characteristic behavior. Micro-structural property analysis shows network like structure in scanning electron microscope. Stability of antioxidant property of Aswagandha after extrusion was also studied and retention of antioxidant property was observed.

Bread fortified with fennel seed powder is thus likely to have higher consumer acceptability than white or other fortified bread. In this study, bread samples were prepared by supplementing white flour with fennel seed powder at the levels of 3.0, 5.0, 7.0, 10.0 and 15.0 % and their physical, sensory, antioxidant and staling characteristics were determined. The present study investigates the effect of exposure at elevated temperature (60°C) on the stabi... more The present study investigates the effect of exposure at elevated temperature (60°C) on the stability of edible oils i.e. sunflower oil, sesame oil and their blends in various proportions of 20:80, 50:50 & 80:20 v/v, with and without addition of antioxidants on the basis of acid value, peroxide value and thiobarbituric acid reactive substances (TBARS) value changes. Tocotrienol rich fraction (TRF) extracted from crude rice bran oil was used as a source of natural antioxidant. Addition of TRF at the optimum level to edible oils was observed to show better stability compared to oils without TRF. The optimum level of TRF activity was measured to be 5 μl/g oil. Considering the combined beneficial effects of sunflower and sesame oil, the blend of these two oils (50:50 v/v) with TRF has been found to be the best. Hence, the stability of edible oil could be enhanced by blending and addition of natural antioxidant.

The processing parameters like puree load (0.4–0.6 g/cm2), total soluble solid (20–30 °B), oven temperature (60–80 °C), and microwave power level (100–300 W) were optimised for a superior textural attribute (hardness) primitive drying method like sun drying, industrially practiced modern methods like hot air oven drying and microwave drying and cutting-edge drying technique like freeze-drying. Response surface methodology and artificial neural network technique were adapted to model these drying procedures by considering the central composite design. The mathematical operations guiding to describe the model were studied. Being an imperative parameter colour quantification is essential for food industries. Current research employs microwave drying to produce mango leather with colour quantification approach. The L, ‘a’ and ‘b’ values of the product have been measured by Hunter Lab colorimeter and by digital image analysis, to determine the chromatic view harmonious to human vision.
