These changes affect directly the cloud stability and color of the juice. In this study, an artificial neural network (ANN) model was applied for designing and developing an intelligent system for prediction of the thermal processing effects on the physicochemical properties of key lime juice during conventional and infrared (IR) heating. The inputs of this network were time and temperature and the outputs were changes in PME activity, AA content, browning index (BI) and also cloud stability of the juice. The feed-forward neural network with a logarithmic transfer function, Levenberg–Marquardt training algorithm and eight neurons in the hidden layer (topology 2-8-4) was chosen as the best ANN model (R2> 0.95, RMSE=0.47 and SE=0.28). The predicted values using the optimal ANN model vs. experimental values represented a correlation coefficient ...

In this study, the effectiveness of come up time on inactivation of heat resistance isoform of polyphenol oxidase (PPO), as a pasteurization index, was investigated during heating of the quince puree in a water bath at 60 to 90 . M5 decision tree, a novel statistical method, was applied to understand the simple relationship between the treatment conditions (time and temperature) and changes in physicochemical properties of the puree. Browning index and the total color difference increased as a result of PPO inactivation and ascorbic acid degradation. Based on the results of the M5 decision tree models and sensitivity analysis it showed temperature was a more leading factor in the changes of the puree quality.

This goal can be achieved using the powder of dried fruit and vegetable in cake formulation. Scope and approach; In this paper, the effects of dried fruits and vegetable powder (apple, quince, orange, various berries, grape pomace, mango, peach, melon, carrot, pumpkin and mushroom) on the batter rheology, physicochemical properties, organoleptic aspects and microbial attributes of the cakes were reviewed. It was determined that these kinds of powder raised the fibers content and nutritional values of the cakes (antioxidants, vitamins and minerals). The high water absorption capacity of the fiber affects batter rheology, the texture, volume, density and microbial attributes of the cake. Key finding and conclusion; In conclusion, powder of fruit and vegetable exhibited benefits of attracting the consumers by improving appearance, texture, nutritional values, sensorial properties and shelf life of the cake.

This article demonstrates a way to acknowledge the complexity of this audience without dismissing its most virulent tendencies via practice theory and weak theory. Using data drawn from a qualitative survey of 393 self-identified first-person shooter video game players, this article looks at the specific practice of “teabagging” in online competitive gaming contexts. Ultimately, this article argues that drawing attention to the gaps and fissures that local gaming practices can produce in broader structures of gaming, sexuality, and class can help critical gaming scholars encourage and cultivate such practices as well as construct new, reparative alliances be...

The contributions offer a fundamentally novel approach towards international trade, investment and global governance in an unsettled time of shifting geopolitics when many institutions developed in the West are being called into question. The book covers a broad range of BRI-related international economic law and policy issues, including trade facilitation and connectivity, economics and geopolitics of new trade routes, foreign direct investment law, bilateral investment treaties, free trade agreements, financing of infrastructure, development aid, and international dispute resolution, and regional economic integration.

A series of C-28-oleanolates including five new (5, 7–10) and seven known (1–4, 6, 11, 12) compounds were synthesised and their nematicidal activity was determined and compared with the standard nematicide furadan for the first time. The structures of the compounds were elucidated through 1H NMR, 13C NMR and EIMS. Compounds 4, 5, 7, 8 and 10 showed ∼ 90% inhibition of RKN at 0.125% concentration after 72 h showing their potential use in nematicidal control.
