Conventionally, barberry fruit is dried and consumed as ornamental additive in traditional food. Barberry fruit juice contains high anthocyanins, therefore its spray dried powder can be used as good sources of anthocyanins. Maltodextrin(MD)-Arabic gum(AG) mixture, as carrier in various ratios, were added to the extract to prepare spray dried powder. The drying inlet air temperatures were 160°C and 180°C with air flow rate set to 50 m3/h. The anthocyanins content, product recovery, color, moisture content, dissolution, water activity, and density of spray-dried barberry powder were measured. The results revealed that the product recovery was about 78% when the air temperature set to 160oC and the barberry extract was supplemented with 75:25 ratio of MD:AG. The optimum amount of anthocyanins (390.46 mg/100g) in powder was achieved when the inlet air temperature was 160oC and equal proportions of MD:AG added to the fee...
Aloe vera gel is widely used as a functional ingredient in food processing. This gel is very unst... more Aloe vera gel is widely used as a functional ingredient in food processing. This gel is very unstable due to its high water activity. Drying process can be used to obtain shelf stable products. Response surface methodology was used to assess the effects of solution concentration (30-60% w/w), solution temperature (30-50°C) and immersion time (4-6h) at atmospheric pressure and constant solution to sample ratio (10:1) on water loss (WL), solid gain (SG), weight reduction (WR), vitamin C content (VCC) and the total phenolic content (TPC) of Aloe vera gel. The optimized conditions of osmotic dehydration combined with hot air drying were 60% (w/w) solution concentration, 30.2°C solution temperature and 349 min immersion time. Under these conditions water loss, solid gain and weight reduction found to be 72.67 (g/100g), 5.33(g/100g) and 67.34 (g/100g), respectively. The vitamin C and TPC of the osmo-air dried gel were 12.70 mg/100g DM and 11.33 mg GAE/100g DM, respectively.

Sardasht’s red grape (Vitis Viniferae cv. Rash) skin is one of the most abundant wastes found in ... more Sardasht’s red grape (Vitis Viniferae cv. Rash) skin is one of the most abundant wastes found in juice factories annually and is a rich source of bioactive compounds. In this research after preparing the extract with ethanol-chloride-acid solution from the skin of Sardasht’s red grape, the bioactive compounds were determined using high performance liquid chromatography (HPLC). The results showed the highest amount of phenolic compounds were for gallic acid then catechin, salicylic acid and vanillic acid. The highest levels of anthocyanins were Petunidin 3-o-glucopyranoside and Peonidin 3-o-glucoside chloride. Microencapsulation of the skin of Sardasht’s red grape extracted is done by maltodextrins and Arabic gum with ratios of 50-50, 75-25. In this research some of the physical and gravitational characteristics as volume, mass density , true density, porosity, the angle of slip and repose, the rate of moisture, the average of geometrical dimensions, the mathematical average of diameter, sphere city and the slenderness ratio with 5% possibility level on three types of pistachio (Akbari, Khankary, fandogi) were studied in Damghan.
