Research was conducted in two steps, comprise recovery of protein from surimi waste water and processing of edible film. Recovery of protein was conducted in order to obtain the protein concentrate as a raw material of edible film. Processing of edible film was achieved in two step, first, to determine the pH solution creating the best edible film.The second step (as main reseach) is processing of edible film using determined pH generated from the first step combined with varies concentration of surimi waste-water concentrate.Afterward the edible film was physically and mekanically characterized.The results showed that the escalating concentration of protein concentrate causes in rising of thickness and elongation, but in the same time it reduces the tensile strength and water vapor transmission rate of edible film. Research on the production of mango fruit leather with the addition of carrageenan as the binder ... more Research on the production of mango fruit leather with the addition of carrageenan as the binder has been conducted. The fruit leather production process needs ripe and fresh mango. Carrageenan which was used as the binder was produced from the extraction of seaweed Eucheuma cottonii. The concentrations of carrageenan that used were 0%, 0,2%, 0,4% and 0,6% by using gelatin as a comparison. The fruit leather ingredients are puree mango, sugar, sorbitol, and carrageenan. The analysis was conducted to the carrageenan as the binder and the fruit leather as a product. The parameters which were analyzed were moisture content, ash content, acid insoluble ash content and gel strength. The mango fruit leather was analized in terms of moisture content, water activity (Aw), organoleptic hedonic test and hedonic quality. Namun, pergeseran komposisi nutrisi dapat terjadi akibat perubahan lingkungan akibat limpasan nutrien dan bahan organik lainnya yang umum terjadi di perairan pesisir Indonesia. Penelitian ini bertujuan untuk melakukan identifikasi pergeseran kandungan nutrisi H. opuntia yang tumbuh di zona intertidal agar dapat digunakan sebagai dasar pemilihan lokasi pengambilan bahan baku H. opuntia untuk produk fungsional. Pengambilan sampel dilakukan di empat lokasi perairan di Indonesia, yaitu perairan Binuangeun (Banten), Lampung Selatan, Lombok Timur (Nusa Tenggara Barat) dan Konawe Selatan (Sulawesi Tenggara). Karakteristik nutrisi dari rumput laut target meliputi kadar air, abu, protein, lemak, karbohidrat, dan serat kasar.
