This mixed-methods study aimed to assess COVID-19 fear, anxiety, and stress among Shenandoah Valley college students. Methods An online survey was fielded and completed by n=680 students. Qualitative semi-structured interviews were conducted with 20 students. Results The mean participant age was 22.14±5.48 years, and primarily White (81.9%), women (80.4%), and undergraduate (78.0%) students. Approximately 41% were enrolled in health-related majors (41.4%). Women students had significantly higher anxiety, depression, and fear of contracting COVID-19 than men. Undergraduate students had significantly higher depression than graduate students. Qualitative analysis revealed several major themes: psychological stress during the pandemic, disruption in academic life, family support, support from the university, and recommendations for the university. The purpose of the systematic review was to consolidate evidence for the effect of Covid-19 on students’ dietary quality, dietary habits, body weight and food security status. A comprehensive literature search was conducted utilising various databases including Google Scholar, MEDLINE, ScienceDirect, Embase and Scopus to identify relevant studies. To be incorporated in this review, studies had to include higher education students, measure the prevalence of food insecurity and assess the dietary and body weight changes during the COVID-19 pandemic. It is unclear whether regular intake of α-linolenic acid (ALA), a plant-derived n-3 polyunsaturated fatty acid, raises n-3 index in older adults. Of the 356 participants at the Loma Linda, CA centre from the original study, a randomly selected subset (n 192) was included for this secondary analysis (mostly Caucasian women, mean age 69 years). Participants were assigned to either the walnut (15 % of daily energy from walnuts) or the control group (usual diet, no walnuts) for 2 years. Erythrocyte fatty acids were determined at baseline and 1-year following intervention. This is partly due to the food demands of the consumers that drive the current industrial food production system. Food production and particularly the dietary patterns and food habits of the population need to change. Thus, adopting a sustainable diet at the global level is essential. This chapter focuses on the effect of population-level dietary choices (type of foods) and habits (food waste) on environmental sustainability, and introduces four food determinants of sustainable diets from the consumer's perspective. These determinants are: (1) the proportion of foods in the diet from animal versus plant origin, (2) the proportion of processed versus whole foods, (3) the proportion of imported versus foods in-season, and (4) the proportion of food wasted. A sustainable diet comprises foods and food groups consumed in season, minimally processed, are mainly from plants, and are not wasted.

Comprehensive evaluations of clinical and anthropometric outcomes were conducted at baseline and at the end of intervention.
