Oggi sappiamo che il modello più adeguato per comprendere i comportamenti di acquisto (e per la vera essenza dell’uomo) è quello che riconosce all’emozione un ruolo non più secondario o interveniente, ma determinante. Un modello che vede l’uomo come una “macchina emotiva” capace di eccelse razionalizzazioni, e non più una macchina pensante che si emoziona.
Il Neuromarketing si offre dunque come disciplina capace di proporre alla ricerca sui consumatori strategie e metodi utili ed efficaci per misurare l’emozione che caratterizza qualsiasi atto di consumo e ogni forma di fascinazione per spot pubblicitari, siti web, packaging di prodotti o immagini di brand.
Ma come funziona il neuromarketing? Quali principi teorici ne giustificano l’applicazione nel campo dei consumi? Quale vantaggio hanno gli studi sulla comunicazione? Su quali basi scientifiche poggiano le tecniche che utilizza? Si tratta di strategie che si integrano con le modalità d’indagine tradizionali (focus group, interviste, questionari) o che le sostituiscono? Quali sono le principali strumentazioni? Le più efficaci? E soprattutto come usarle?
Il testo risponde a queste domande, partendo da una riflessione teorica sul neuromarketing, da una sintesi della letteratura neuroscientifica relativa ai comportamenti di consumo e da esempi ripresi dagli studi nel campo del food and wine - fortemente connotati da aspetti emozionali e simbolici -, e condotti presso il Centro di Ricerche di Neuromarketing Behavior and Brain Lab dell’Università di Lingue e Comunicazione IULM (nato in collaborazione con la Società Mind Room leader nel campo del biofeedback).
Un volume introduttivo e completo, che mancava nel panorama italiano e che sarà un sicuro supporto non solo per studenti e studiosi, ma anche per quanti già si occupano di marketing e comunicazione nella propria attività lavorativa.
Questa la definizione di sostenibilità del Rapporto Brundtland, 1987. Una frase che sintetizza alla perfezione il significato di sostenibilità. E soprattutto che pone l’accento sul fatto che sostenibilità sociale, ambientale ed economica si definiscono all’interno di un percorso nel quale l’uomo è motore di un cambiamento. Una sostenibilità nella quale i diritti fondamentali alla libertà, all’uguaglianza e a condizioni di vita adeguate vanno messi in atto in un ambiente tale da consentire un’esistenza di dignità e benessere.
La sostenibilità dunque non è semplicemente solo e soltanto legata al coté ambientale. Tanto è vero che già la stessa Dichiarazione di Rio – anno di grazia 1972 – sanciva il diritto di ogni persona ad aspirare a una più elevata qualità della vita. Senza che sostenibilità rimanga per molti sinonimo di lusso costoso.
Questa visione ampia del concetto di sostenibilità è stata la stella polare che ha guidato il Progetto Axía. Una visione condivisa da CRUI – Conferenza dei Rettori delle Università Italiane – e da Nestlé Italiana con il supporto di Cantiere di Comunicazione, che ha l’ambizione di riscrivere la storia italiana dei rapporti tra Università e Imprese nell’ambito dell’impresa scientifica. Un modello che mette a sistema le eccellenze della ricerca universitaria italiana per produrre risultati immediatamente fruibili dalla collettività e che puntino a costituire quei mattoni in grado di costruire uno sviluppo sosten-Abile. Perché oggi bisogna passare dalla teoria alla pratica, o meglio è necessario più che mai coniugare teoria e pratica. Rendendo la sostenibilità un concetto vivo, fatto di “sangue, cuore e nervi” e di azioni concrete.
Di progetti “alti” che siano però al contempo praticabili su larga scala e che entrino a far parte dei comportamenti quotidiani degli individui. Per questo è tuttavia necessario costruire una comunicazione altrettanto sostenibile, in grado di raggiungere il maggior ventaglio possibile di interlocutori. Non solo “addetti ai lavori” e tecnici, ma anche cittadini e istituzioni. Il volume riporta, pertanto, i risultati delle ricerche delle università che hanno contribuito con i propri lavori a dare corpo e saldezza ad un “azzardo”: creare
un circuito virtuoso tra due realtà che hanno linguaggi, tempi, approcci e visioni del mondo differenti.
La convinzione, e la presunzione, di Nestlé e della CRUI è quella di esserci (almeno in parte) riusciti.

Il volume raccoglie i contributi di diversi autori appartenenti ad ambiti disciplinari ed esperienziali profondamente diversi ma accomunati dallo studio sui processi di produzione, di consumo e di distribuzione dei prodotti agroalimentari. Nello specifico gli autori si sono occupati dei meccanismo capaci di incentivare un consumo alimentare sostenibile e attento agli effetti delle scelte non solo sul singolo individuo ma soprattutto sul contetso sociale di appartenenza e sulle popolazioni dei paesi in via di sviluppo.
La riflessione parte dai meccanismi di comunicazione e consumo nel nostro contesto socio-economico per individuare eventuali effetti in altre parti del pianeta. L’idea di partenza del volume risiede nella convinzione che la dimensione etica dovrebbe essere pervasiva della dimensione di sviluppo della produzione e del consumo portando con sè sia degli interventi nei paesi in via di sviluppo sia degli interventi di promozione sul proprio territorio.
La dimensione ecologica dovrebbe far parte di questo percorso non tanto in un’ottica religiosa o ideologica, quanto in una prospettiva pragmatica nella quale il costo della promozione (inteso non solo in senso comunicativo ma anche come capacità produttiva) viene a divenire paradigma per la costruzione di nuova ricchezza nella regione di riferimento per la costruzione di uno sviluppo locale autocentrato.
Nel testo dopo una presentazione dei temi della sostenibilità declinati in termini di politiche alimentari (produzione e consumo) e della sovranità alimentare ci si soffermerà sul ruolo che la comunicazione ha nella promozione di comportamenti di consumo critico, intendendo con tale termine non un atteggiamento oppositivo ma il suo valore positivo. Anche nella scelta del consumo etico i consumatori devono fare i conti con eccessive semplificazioni, trovate giornalistiche e mancanza di adeguate fonti informative scientificamente valide.
Il consumo critico in questo senso non risponde ad una scelta ideologica, ma è l’esito di una consapevole decisione di acquisto che deve prevedere una profonda limitazione dell’asimmetria informativa da parte delle aziende e una maggiore sensibilità da parte dei consumatori nella raccolta delle informazioni.
Il lavoro riporta anche i principali esiti delle attività di ricerca dell’Osservatorio sui Consumi Alimentari della Fondazione Università IULM e delle attività sul campo della Federazione Organismi Cristiani di Servizio Internazionale Volontario FOCSIV.

In questo volume il fenomeno in oggetto appare in funzione del vertice di osservazione dal quale viene considerato, cioè secondo un approccio propriamente psicologico.
Tale approccio, che spesso nella letteratura sulla pubblicità è stato adottato in modo frammentario o naif, intende qui sistematizzare e declinare in forma compiuta una serie di questioni inerenti alla teoria e alla pratica della comunicazione pubblicitaria. Il rapporto tra psicologia e pubblicità, infatti, non consiste solo nel delineare i più importanti concetti e le teorie sul comportamento, mostrandone le applicazioni utili ad implementare l’efficacia persuasiva della comunicazione commerciale, ma gli Autori del libro hanno ritenuto opportuno fondare la Psicologia della pubblicità su una più ampia riflessione teorico-pratica nell’ambito della psicologia del marketing e dei consumi. 208 pagine.

G. Andrea Mancini, psicologo e PhD, svolge attività di ricerca e insegna Psicologia della pubblicità presso la Facoltà di Psicologia dell'Università degli Studi di Firenze. Conduce prevalentemente attività di formazione e consulenza nelle aree marketing, ricerche di mercato e gestione risorse umane, attraverso l’agenzia accreditata Educazione Continua in Sanità, di cui è amministratore.
Vincenzo Russo insegna Psicologia e consumi presso la Libera Università di Lingue e Comunicazione IULM di Milano e di Feltre e Psicologia dei consumi alimentari e valutazione delle preferenze sensoriali presso la Facoltà di Agraria dell’Università Statale di Milano. Fra gli altri incarichi, coordina l’Osservatorio sui consumi alimentari e l’Osservatorio su bambini e media e i progetti di ricerca e di consulenza dell’Area Società e salute della Fondazione Università IULM ed è Direttore scientifico di Master professionalizzanti della Scuola di Comunicazione della Fondazione IULM relativi ai temi della comunicazione sociale e pubblica. Da tempo si occupa di ricerca sul consumatore e comunicazione sociale. Su questi temi ha pubblicato contributi teorici e di ricerca; è coautore, con Nadia Olivero, del Manuale di psicologia dei consumi. Individuo società e comunicazione (McGraw-Hill, 2008).
Massimo Bellotto, professore ordinario di Psicologia del lavoro e delle organizzazioni, svolge attività didattica e di ricerca presso l’Università degli Studi di Verona. Nel corso degli anni ha lavorato all’Università di Venezia – Cà Foscari, alla Facoltà di Psicologia dell’Università degli Studi di Padova, nonché presso la Libera Università di Lingue e Comunicazione IULM di Milano. I suoi studi e le sue pubblicazioni vertono principalmente sugli aspetti teorici e metodologici della formazione psicosociale, sulle culture organizzative, sui valori inerenti allo sviluppo personale e professionale. È membro di associazioni e organismi internazionali e nazionali.

s’inammano gli incontri mediatici, quelli che richiedono soluzioni normative, ma soprattutto quelli per i quali ci si augura un profondo cambiamento culturale e comportamentale per la salute degli individui e per la salvaguardia dell’intero pianeta.
Non a caso queste tre macro aree sono gli assi tematici più signicativi del progetto di candidatura di Milano alla Fiera Universale EXPO e le linee guida degli eventi 2015. L’alimentazione, la sostenibilità e la multiculturalità sono, pertanto, ambiti tematici di enorme complessità, capaci di attrarre inevitabilmente un profondo interesse scientico e che richiedono una rigorosa e quanto mai diffusa attenzione da parte di ricercatori e studiosi.
È proprio da questo interesse scientico e da un’importante strategia di responsabilità sociale che nasce il Progetto Axía. Promosso dalla CRUI – Conferenza dei Rettori delle Università Italiane – e dal Gruppo Nestlé in Italia, il progetto vuole rappresentare un innovativo approccio alla ricerca universitaria attraverso la possibilità di creare valore per la collettività con la diffusione del sapere tramite l’avvio di un circolo virtuoso di collaborazione tra impresa ed università.
Il lavoro raccoglie i risultati di uno studio di fattibilità che Nestlé ha afdato ad esperti docenti e ricercatori universitari – l’Università IULM di Milano e l’Università Federico II di Napoli – con l’obiettivo, da una parte, di individuare temi di ricerca e idee progettuali riconducibili ai tre temi e che fossero di attualità, di rilevanza socio-economica, di elevata scienticità ed innovatività; dall’altra, quello di rendere fruibili i risultati del lavoro, diffondendo i dati all’interno della comunità scientica e professionale per contribuire a future iniziative di ricerca.
Il volume riporta, pertanto, i principali materiali, gli articoli critici di esperti ricercatori, le interviste a noti opinion leader, la sintesi dei progetti che sono stati richiesti attraverso un call for ideas rivolto a tutte le università. Tra questi progetti vi sono quellisostenuti economicamente da Nestlé.
L’augurio di Nestlé e della CRUI è di dare così avvio ad un percorso d'impegno tangibile nei confronti della ricerca universitaria in Italia di cui possano beneciare non soltanto le aziende, ma anche la collettività, e le generazioni future.

PREMESSA ED OBIETTIVI
La ricerca stata svolta dal gruppo di lavoro dell’Osservatorio sui Consumi Alimentari della Fondazione IULM. Tale osservatorio svolge attività di analisi sul campo e ricerche desk finalizzate allo studio dei principali trend di consumo alimentare in Italia ed al rapporto che tale consumo ha con il mondo della comunicazione.
La ricerca è stata svolta con l’obiettivo di individuare i principali trend di sviluppo del consumo di prodotti tipici della Regione Lombardia, partendo dalle motivazioni di scelta e dai processi di acquisto dei giovani abitanti nella regione e di età compresa tra i 22 e i 32 anni.
Le attività di ricerca sono state finalizzate ad individuare le principali motivazioni al consumo da parte dei giovani (22 – 32 anni) e il loro rapporto con i prodotti tipici e locali della Regione Lombardia. In considerazione della tipologia di consumatori la riflessione finale è stata fatta considerando anche la discrezionalità e la disponibilità economica del gruppo di riferimento. Inoltre l’indagine ha permesso di analizzare l’efficacia e la percezione dei processi di comunicazione.
METODOLOGIA E FASI DELLA RICERCA
La ricerca è stata svolta con una metodlogia quali-quantitiva.
In particolare sono state realizzate diverse tipologie di interviste con finalità conoscitive ed esplorative:
1. le prime rivolte ad opinion leader e condotte in modo differenziato a ristoratori, produttori e soggetti parte della filiera commerciale (solo ricerca qualitativa);
2. le seconde sono state rivolte direttamente al target di riferimento (giovani di età compresa tra i 22 e 32 anni) per una prima ricognizione sul campo (sia ricerca qualitativa che quantitativa ).
La parte quantitativa è stata svolta con due sondaggi paralleli:
1. un sondaggio face to face rivolto a 183 giovani particolarmente attenti al tema della sostenibilità, del biologico e del tipico e che hanno preso parte ad una delle più note Fiere in questo ambito (Fa la Cosa Giusta tenutasi a Milano dal 12 al 14 marzo, 2010);
2. un sondaggio estensivo con metodo CAWI che ha visto coinvolti circa un migliaio di giovani consumatori di età compresa tra i 22 e i 32 anni.
Il report completo dei dati verrà presentato a settembre 2010 in collaborazione con la Regione Lombardia - Assessorato all'Agricoltura.
e dei bambini delle scuole primarie del Comune di Milano è uno dei più grandi progetti di ricerca
e di ascolto sulle abitudini alimentari e sugli stili di vita svolti nelle scuole cittadine.
Grazie alla posizione strategica di Milano Ristorazione, è stato possibile estendere l’intervento a
tutte le scuole primarie della città, distribuendo ben 45.000 questionari ad altrettante famiglie.
L’autorevolezza dei partner coinvolti, la Fondazione Università IIULM e il suo Osservatorio sui Consumi Alimentari (diretto dal prof. Vincenzo Russo) e l’Assessorato Ricerca,
Innovazione e Capitale Umano del Comune di Milano che ha finanziato il progetto,ha concorso
a costruire solide basi scientifiche e metodologiche all’iniziativa.
La presente relazione intende illustrare in modo compiuto la realizzazione del progetto di ricerca
da parte di Milano Ristorazione e Fondazione Università IULM avviato nel gennaio 2008 e
conclusosi a giugno 2009 che si articola in due sezioni.
La prima illustra le fasi principali, i tempi e i soggetti coinvolti nella realizzazione progettuale e
operativa dell’intervento sul campo. La seconda parte è dedicata alla presentazione dei risultati
scientifici conseguiti e della loro utilità per il territorio.

Non basta realizzare un buon prodotto o progettare un buon servizio di ristorazione, occorre saperlo “confezionare” al meglio e venderlo bene attraverso semplici ma potenti accorgimenti. Servendosi delle più recenti ricerche nel campo della neurogastrofisica, e valorizzando le più interessanti intuizioni provenienti dall’economia comportamentale, vengono approfonditi i principi base dei processi esperienziali enogastronomici e della ristorazione:

Il testo risponde a queste domande muovendo da una riflessione teorica sui processi percettivi, a partire da esperienze e ricerche di neuromarketing, da una sintesi della letteratura neuroscientifica relativa ai comportamenti di consumo alimentare e neuroscienze e da esempi ripresi dagli studi nel campo del food and wine, fortemente connotati da aspetti emozionali e simbolici.

Oggi sappiamo che il modello più adeguato per comprendere i comportamenti di acquisto (e per la vera essenza dell’uomo) è quello che riconosce all’emozione un ruolo non più secondario o interveniente, ma determinante. Un modello che vede l’uomo come una “macchina emotiva” capace di eccelse razionalizzazioni, e non più una macchina pensante che si emoziona.
Il Neuromarketing si offre dunque come disciplina capace di proporre alla ricerca sui consumatori strategie e metodi utili ed efficaci per misurare l’emozione che caratterizza qualsiasi atto di consumo e ogni forma di fascinazione per spot pubblicitari, siti web, packaging di prodotti o immagini di brand.
Ma come funziona il neuromarketing? Quali principi teorici ne giustificano l’applicazione nel campo dei consumi? Quale vantaggio hanno gli studi sulla comunicazione? Su quali basi scientifiche poggiano le tecniche che utilizza? Si tratta di strategie che si integrano con le modalità d’indagine tradizionali (focus group, interviste, questionari) o che le sostituiscono? Quali sono le principali strumentazioni? Le più efficaci? E soprattutto come usarle?
Il testo risponde a queste domande, partendo da una riflessione teorica sul neuromarketing, da una sintesi della letteratura neuroscientifica relativa ai comportamenti di consumo e da esempi ripresi dagli studi nel campo del food and wine - fortemente connotati da aspetti emozionali e simbolici -, e condotti presso il Centro di Ricerche di Neuromarketing Behavior and Brain Lab dell’Università di Lingue e Comunicazione IULM (nato in collaborazione con la Società Mind Room leader nel campo del biofeedback).
Un volume introduttivo e completo, che mancava nel panorama italiano e che sarà un sicuro supporto non solo per studenti e studiosi, ma anche per quanti già si occupano di marketing e comunicazione nella propria attività lavorativa.
Questa la definizione di sostenibilità del Rapporto Brundtland, 1987. Una frase che sintetizza alla perfezione il significato di sostenibilità. E soprattutto che pone l’accento sul fatto che sostenibilità sociale, ambientale ed economica si definiscono all’interno di un percorso nel quale l’uomo è motore di un cambiamento. Una sostenibilità nella quale i diritti fondamentali alla libertà, all’uguaglianza e a condizioni di vita adeguate vanno messi in atto in un ambiente tale da consentire un’esistenza di dignità e benessere.
La sostenibilità dunque non è semplicemente solo e soltanto legata al coté ambientale. Tanto è vero che già la stessa Dichiarazione di Rio – anno di grazia 1972 – sanciva il diritto di ogni persona ad aspirare a una più elevata qualità della vita. Senza che sostenibilità rimanga per molti sinonimo di lusso costoso.
Questa visione ampia del concetto di sostenibilità è stata la stella polare che ha guidato il Progetto Axía. Una visione condivisa da CRUI – Conferenza dei Rettori delle Università Italiane – e da Nestlé Italiana con il supporto di Cantiere di Comunicazione, che ha l’ambizione di riscrivere la storia italiana dei rapporti tra Università e Imprese nell’ambito dell’impresa scientifica. Un modello che mette a sistema le eccellenze della ricerca universitaria italiana per produrre risultati immediatamente fruibili dalla collettività e che puntino a costituire quei mattoni in grado di costruire uno sviluppo sosten-Abile. Perché oggi bisogna passare dalla teoria alla pratica, o meglio è necessario più che mai coniugare teoria e pratica. Rendendo la sostenibilità un concetto vivo, fatto di “sangue, cuore e nervi” e di azioni concrete.
Di progetti “alti” che siano però al contempo praticabili su larga scala e che entrino a far parte dei comportamenti quotidiani degli individui. Per questo è tuttavia necessario costruire una comunicazione altrettanto sostenibile, in grado di raggiungere il maggior ventaglio possibile di interlocutori. Non solo “addetti ai lavori” e tecnici, ma anche cittadini e istituzioni. Il volume riporta, pertanto, i risultati delle ricerche delle università che hanno contribuito con i propri lavori a dare corpo e saldezza ad un “azzardo”: creare
un circuito virtuoso tra due realtà che hanno linguaggi, tempi, approcci e visioni del mondo differenti.
La convinzione, e la presunzione, di Nestlé e della CRUI è quella di esserci (almeno in parte) riusciti.

Il volume raccoglie i contributi di diversi autori appartenenti ad ambiti disciplinari ed esperienziali profondamente diversi ma accomunati dallo studio sui processi di produzione, di consumo e di distribuzione dei prodotti agroalimentari. Nello specifico gli autori si sono occupati dei meccanismo capaci di incentivare un consumo alimentare sostenibile e attento agli effetti delle scelte non solo sul singolo individuo ma soprattutto sul contetso sociale di appartenenza e sulle popolazioni dei paesi in via di sviluppo.
La riflessione parte dai meccanismi di comunicazione e consumo nel nostro contesto socio-economico per individuare eventuali effetti in altre parti del pianeta. L’idea di partenza del volume risiede nella convinzione che la dimensione etica dovrebbe essere pervasiva della dimensione di sviluppo della produzione e del consumo portando con sè sia degli interventi nei paesi in via di sviluppo sia degli interventi di promozione sul proprio territorio.
La dimensione ecologica dovrebbe far parte di questo percorso non tanto in un’ottica religiosa o ideologica, quanto in una prospettiva pragmatica nella quale il costo della promozione (inteso non solo in senso comunicativo ma anche come capacità produttiva) viene a divenire paradigma per la costruzione di nuova ricchezza nella regione di riferimento per la costruzione di uno sviluppo locale autocentrato.
Nel testo dopo una presentazione dei temi della sostenibilità declinati in termini di politiche alimentari (produzione e consumo) e della sovranità alimentare ci si soffermerà sul ruolo che la comunicazione ha nella promozione di comportamenti di consumo critico, intendendo con tale termine non un atteggiamento oppositivo ma il suo valore positivo. Anche nella scelta del consumo etico i consumatori devono fare i conti con eccessive semplificazioni, trovate giornalistiche e mancanza di adeguate fonti informative scientificamente valide.
Il consumo critico in questo senso non risponde ad una scelta ideologica, ma è l’esito di una consapevole decisione di acquisto che deve prevedere una profonda limitazione dell’asimmetria informativa da parte delle aziende e una maggiore sensibilità da parte dei consumatori nella raccolta delle informazioni.
Il lavoro riporta anche i principali esiti delle attività di ricerca dell’Osservatorio sui Consumi Alimentari della Fondazione Università IULM e delle attività sul campo della Federazione Organismi Cristiani di Servizio Internazionale Volontario FOCSIV.

In questo volume il fenomeno in oggetto appare in funzione del vertice di osservazione dal quale viene considerato, cioè secondo un approccio propriamente psicologico.
Tale approccio, che spesso nella letteratura sulla pubblicità è stato adottato in modo frammentario o naif, intende qui sistematizzare e declinare in forma compiuta una serie di questioni inerenti alla teoria e alla pratica della comunicazione pubblicitaria. Il rapporto tra psicologia e pubblicità, infatti, non consiste solo nel delineare i più importanti concetti e le teorie sul comportamento, mostrandone le applicazioni utili ad implementare l’efficacia persuasiva della comunicazione commerciale, ma gli Autori del libro hanno ritenuto opportuno fondare la Psicologia della pubblicità su una più ampia riflessione teorico-pratica nell’ambito della psicologia del marketing e dei consumi. 208 pagine.

G. Andrea Mancini, psicologo e PhD, svolge attività di ricerca e insegna Psicologia della pubblicità presso la Facoltà di Psicologia dell'Università degli Studi di Firenze. Conduce prevalentemente attività di formazione e consulenza nelle aree marketing, ricerche di mercato e gestione risorse umane, attraverso l’agenzia accreditata Educazione Continua in Sanità, di cui è amministratore.
Vincenzo Russo insegna Psicologia e consumi presso la Libera Università di Lingue e Comunicazione IULM di Milano e di Feltre e Psicologia dei consumi alimentari e valutazione delle preferenze sensoriali presso la Facoltà di Agraria dell’Università Statale di Milano. Fra gli altri incarichi, coordina l’Osservatorio sui consumi alimentari e l’Osservatorio su bambini e media e i progetti di ricerca e di consulenza dell’Area Società e salute della Fondazione Università IULM ed è Direttore scientifico di Master professionalizzanti della Scuola di Comunicazione della Fondazione IULM relativi ai temi della comunicazione sociale e pubblica. Da tempo si occupa di ricerca sul consumatore e comunicazione sociale. Su questi temi ha pubblicato contributi teorici e di ricerca; è coautore, con Nadia Olivero, del Manuale di psicologia dei consumi. Individuo società e comunicazione (McGraw-Hill, 2008).
Massimo Bellotto, professore ordinario di Psicologia del lavoro e delle organizzazioni, svolge attività didattica e di ricerca presso l’Università degli Studi di Verona. Nel corso degli anni ha lavorato all’Università di Venezia – Cà Foscari, alla Facoltà di Psicologia dell’Università degli Studi di Padova, nonché presso la Libera Università di Lingue e Comunicazione IULM di Milano. I suoi studi e le sue pubblicazioni vertono principalmente sugli aspetti teorici e metodologici della formazione psicosociale, sulle culture organizzative, sui valori inerenti allo sviluppo personale e professionale. È membro di associazioni e organismi internazionali e nazionali.

s’inammano gli incontri mediatici, quelli che richiedono soluzioni normative, ma soprattutto quelli per i quali ci si augura un profondo cambiamento culturale e comportamentale per la salute degli individui e per la salvaguardia dell’intero pianeta.
Non a caso queste tre macro aree sono gli assi tematici più signicativi del progetto di candidatura di Milano alla Fiera Universale EXPO e le linee guida degli eventi 2015. L’alimentazione, la sostenibilità e la multiculturalità sono, pertanto, ambiti tematici di enorme complessità, capaci di attrarre inevitabilmente un profondo interesse scientico e che richiedono una rigorosa e quanto mai diffusa attenzione da parte di ricercatori e studiosi.
È proprio da questo interesse scientico e da un’importante strategia di responsabilità sociale che nasce il Progetto Axía. Promosso dalla CRUI – Conferenza dei Rettori delle Università Italiane – e dal Gruppo Nestlé in Italia, il progetto vuole rappresentare un innovativo approccio alla ricerca universitaria attraverso la possibilità di creare valore per la collettività con la diffusione del sapere tramite l’avvio di un circolo virtuoso di collaborazione tra impresa ed università.
Il lavoro raccoglie i risultati di uno studio di fattibilità che Nestlé ha afdato ad esperti docenti e ricercatori universitari – l’Università IULM di Milano e l’Università Federico II di Napoli – con l’obiettivo, da una parte, di individuare temi di ricerca e idee progettuali riconducibili ai tre temi e che fossero di attualità, di rilevanza socio-economica, di elevata scienticità ed innovatività; dall’altra, quello di rendere fruibili i risultati del lavoro, diffondendo i dati all’interno della comunità scientica e professionale per contribuire a future iniziative di ricerca.
Il volume riporta, pertanto, i principali materiali, gli articoli critici di esperti ricercatori, le interviste a noti opinion leader, la sintesi dei progetti che sono stati richiesti attraverso un call for ideas rivolto a tutte le università. Tra questi progetti vi sono quellisostenuti economicamente da Nestlé.
L’augurio di Nestlé e della CRUI è di dare così avvio ad un percorso d'impegno tangibile nei confronti della ricerca universitaria in Italia di cui possano beneciare non soltanto le aziende, ma anche la collettività, e le generazioni future.
PERCEZIONE SOCIALE E COMPORTAMENTI DI CONSUMO”

PREMESSA ED OBIETTIVI
La ricerca stata svolta dal gruppo di lavoro dell’Osservatorio sui Consumi Alimentari della Fondazione IULM. Tale osservatorio svolge attività di analisi sul campo e ricerche desk finalizzate allo studio dei principali trend di consumo alimentare in Italia ed al rapporto che tale consumo ha con il mondo della comunicazione.
La ricerca è stata svolta con l’obiettivo di individuare i principali trend di sviluppo del consumo di prodotti tipici della Regione Lombardia, partendo dalle motivazioni di scelta e dai processi di acquisto dei giovani abitanti nella regione e di età compresa tra i 22 e i 32 anni.
Le attività di ricerca sono state finalizzate ad individuare le principali motivazioni al consumo da parte dei giovani (22 – 32 anni) e il loro rapporto con i prodotti tipici e locali della Regione Lombardia. In considerazione della tipologia di consumatori la riflessione finale è stata fatta considerando anche la discrezionalità e la disponibilità economica del gruppo di riferimento. Inoltre l’indagine ha permesso di analizzare l’efficacia e la percezione dei processi di comunicazione.
METODOLOGIA E FASI DELLA RICERCA
La ricerca è stata svolta con una metodlogia quali-quantitiva.
In particolare sono state realizzate diverse tipologie di interviste con finalità conoscitive ed esplorative:
1. le prime rivolte ad opinion leader e condotte in modo differenziato a ristoratori, produttori e soggetti parte della filiera commerciale (solo ricerca qualitativa);
2. le seconde sono state rivolte direttamente al target di riferimento (giovani di età compresa tra i 22 e 32 anni) per una prima ricognizione sul campo (sia ricerca qualitativa che quantitativa ).
La parte quantitativa è stata svolta con due sondaggi paralleli:
1. un sondaggio face to face rivolto a 183 giovani particolarmente attenti al tema della sostenibilità, del biologico e del tipico e che hanno preso parte ad una delle più note Fiere in questo ambito (Fa la Cosa Giusta tenutasi a Milano dal 12 al 14 marzo, 2010);
2. un sondaggio estensivo con metodo CAWI che ha visto coinvolti circa un migliaio di giovani consumatori di età compresa tra i 22 e i 32 anni.
Il report completo dei dati verrà presentato a settembre 2010 in collaborazione con la Regione Lombardia - Assessorato all'Agricoltura.
e dei bambini delle scuole primarie del Comune di Milano è uno dei più grandi progetti di ricerca
e di ascolto sulle abitudini alimentari e sugli stili di vita svolti nelle scuole cittadine.
Grazie alla posizione strategica di Milano Ristorazione, è stato possibile estendere l’intervento a
tutte le scuole primarie della città, distribuendo ben 45.000 questionari ad altrettante famiglie.
L’autorevolezza dei partner coinvolti, la Fondazione Università IIULM e il suo Osservatorio sui Consumi Alimentari (diretto dal prof. Vincenzo Russo) e l’Assessorato Ricerca,
Innovazione e Capitale Umano del Comune di Milano che ha finanziato il progetto,ha concorso
a costruire solide basi scientifiche e metodologiche all’iniziativa.
La presente relazione intende illustrare in modo compiuto la realizzazione del progetto di ricerca
da parte di Milano Ristorazione e Fondazione Università IULM avviato nel gennaio 2008 e
conclusosi a giugno 2009 che si articola in due sezioni.
La prima illustra le fasi principali, i tempi e i soggetti coinvolti nella realizzazione progettuale e
operativa dell’intervento sul campo. La seconda parte è dedicata alla presentazione dei risultati
scientifici conseguiti e della loro utilità per il territorio.
