Dorina | Healthy Cooking on Instagram: "Filo Pastry Apple Pie 🍎🍏 Ingredients: -7-8 filo pastry sheets -coconut oil for brushing (or melted butter, olive oil) -2 large apples -3 large eggs -2 tablespoons yogurt -3 tablespoons maple syrup -1 teaspoons cinnamon powder -150ml milk -vanilla extract Instructions: 1. Preheat your oven to 180°C/356°F. 2. Brush the baking pan with coconut oil or butter. 3. Lay one sheet of filo pastry onto your workspace and brush with coconut oil (butter or olive oil). Fold the pastry in an accordion-style. 4. Transfer the folded filo pastry to your baking pan and place it in the middle. Repeat with the remaining filo pastry until your pan is full. 5. Wash apples, remove core and thinly slice them. Arrange the slices between the filo pastry pleats. 6. My take on a luscious Greek-style orange and filo pie, soaked in a sweet, citrus syrup. Naturally I consulted my mate @georginahayden when recipe testing this! It’s a one bowl wonder and has very quickly become one of my new favourite cakes.

Ingredients

Portokalopita

Prep 15 min
Cook 1 hr 20 min, plus cooling
Chill Overnight
Makes 1 20cm cake

540g filo pastry (ie, 2 x 270g packs)
3 eggs
125g caster sugar
200ml double cream
Zest of 3 oranges
Juice of 2 oranges
1½ tsp bicarbonate of soda
1 tsp baking powder
125g unsalted butter, melted

For the Syrup
• 150g sugar
• Juice of 4 oranges
• Zest of 1 orange
• 1 cinnamon stick

Instructions
•Preheat oven to 195C (175°C fan).
