The effect of hot water blanching on proximate and mineral constitution of two edible bamboo shoo... more The effect of hot water blanching on proximate and mineral constitution of two edible bamboo shoots viz., Bambusa nutans and B. balcooa, was investigated in the eastern Himalayan Terai region of West Bengal, India. The proximate and mineral composition was determined at the laboratory of Department of Forestry,Uttar Banga Krishi Viswavidyalaya in 2021-22 by using standard methods. In the present study, hot water blanching at 100ºC for 20 minutes was significantly reduced the carbohydrate (4.11g/100g fw), total protein (1.19g/100g fw), fat (0.28g/100g fw), ash (0.09g/100g fw), energy value (26.90 Kcal/100g fw), HCN content (8.72 mg/ Kg) and minerals viz. potassium (233.10mg/100g fw), calcium (11.84mg/100g fw) and magnesium (3.19mg/100g fw) content whereas enhanced the moisture content (92.75%), crude fibre (1.58g/100g fw), iron (1.78mg/100g fw) and copper content (0.94mg/100g fw), respectively, in comparison to the raw bamboo shoots. The influence of organic amendments and inorganic fertilizers on cabbage head was investigated to... more The influence of organic amendments and inorganic fertilizers on cabbage head was investigated to determine their effect on storage behavior and organoleptic quality. Field cabbage was raised by combining fourteen different treatments comprising of organic amendments and inorganic fertilizers at different levels. The result showed that nutrient schedule of the crop significantly influenced the physiological loss in weight (PLW) and organoleptic quality of cabbage head and judicious selection of nutrient combination can extend the storage life and reduce the post harvest detoriaration of head. The nutrient schedule comprising of higher level of FYM (16 t ha-1) along with 75% of recommended inorganic fertilizers in conjugation with seedling inoculation of biofertilizer emerged as potential nutrient source for improving storage life, marketability and maintaining nutritional and organoleptic quality under ambient storage condition.

Arg.) is a minor underexploited fruit crop under the Euphorbiaceae family. In the present investigation an attempt has been made to under the changes in physical and bio-chemical properties during the growth and development period of the fruit. The physical parameters like fruit length, breadth, weight, peel weight, seed weight and pulp percentage increased significantly till maturity. The bio-chemical properties like total soluble solids, total sugar and reducing sugar also increased significantly, while the acidity and pH decreased with the maturity. However, non-reducing sugar did not show a significant increase. The colour of the fruit was green during initial stage and it changed gradually to lighter shades through different shades of green and yellow green and attainted yellow shades at maturity. The specific gravity of the fruit increased till last stage of harvest.

Hence an attempt has been made to reduce salt consumption in fermented product like Mango pickleb this is done by replacing the curing solution partially with KCl and CaCl2. The pickle prepared using different salt combinations are being analysed for different qualitative properties like water drawing capacity (g/100g salt), hardness of cured sample (N), water activity, sodium and potassium concentration in pickle (in ppm), LAB population (log CFU), total plate count (log CFU) and organoleptic properties based on Hedonic scale. The best salt mixture is being identified by proper optimization. This research would provide a clear idea about the possibility of Na reduction in processed food products.

Sohiong (Prunus nepalensis L.), an indigenous fruit of Meghalaya, India, is rich in anthocyanins. The study was carried out to optimize the extraction of anthocyanin from Sohiong using varied ethanol and citric acid concentration at different time and temperature. The maximal yield of anthocyanins (837.74 ± 8.38 mg cyd-3-O-glu/ 100 g dm) was observed at ethanol concentration of 60% (v/v) acidified with 3% (w/v) citric acid at 350 C for 120 minutes. Extracts showed high antioxidative capacity (DPPH= 16.6 ± 0.07 mg TEAC/g dm; FRAP= 31.8 ± 0.14 mmol AEAC/100 g dm) owing to the presence of bioactive compounds like phenols, flavonoids, tannins, etc. Thus the fruit has high potential as natural colourant and can be used for the prevention of chronic diseases.

Purpose An upsurge in health and environmental concerns over the use of synthetic color has made ... more Purpose An upsurge in health and environmental concerns over the use of synthetic color has made the development of color from cheap and easily available natural sources, namely, plants, animals, micro-organisms and algae as indispensable. This study aims to extract anthocyanins, an important natural plant pigments, from Sohiong (Prunus nepalensis). This study demonstrated that Sohiong have high anthocyanins content and antioxidant property, indicating an immense potential for the fruit producers and food processors. Design/methodology/approach Response surface methodology was used to optimize the conditions for extraction of anthocyanins from Sohiong using conventional solvent extraction. Findings The optimum conditions for extraction were found to be 36.75°C temperature, 60.32 per cent ethanol concentration and 2.39 per cent citric acid concentration with recovery of 45 per cent total extract yield, 858.84 mg C3G/100g DM anthocyanin content and 824.91 mg GAE/100g DM phenolic content with in-vitro antioxidant activity of 31.40 mmol AEAC/100g DM for FRAP and 84.66 per cent DPPH scavenging capacity (20mg/ml). The F-values and high values of adjusted determination coefficient for each response imply high level of significance of the fitted models. Practical implications Extracted color can be used in food and pharmaceutical industries. Social implications Pigment extracted is from a natural source and possesses high antioxidative activity and potential health benefits. With increasing demand for natural colors and other additives, there is a wide range of applications of the pigment as natural colorant in the food and pharmaceutical sector. Originality/value Selected plant source, i.e. Sohiong, was not used earlier by any researcher to extract anthocyanins for potential applications as food colorant.
