松の内の七日の夜は八戸の友人達との新年会で向かった先が磯 洋介店主が腕を揮われる八戸で唯一無二の江戸前ずし店『鮨 瑞穂』さんです。全九席のL字型カウンター席の半分以上の六席を使わせていただいてのほぼ貸切り状態での宴の時間。生ビールで乾杯を済ませ御任せ料理は先付の『螺貝(ツブガイ)』煮から順に八戸産の『寒鮃(カンビラメ)』と深浦産の『ボタン海老(エビ)』の昆布〆(コブジメ)をミネラル感たっぷりの塩と卸たての山葵(ワサビ)で味わい八戸産の『鰯(イワシ)』と大葉(オオバ)とガリを海苔(ノリ)で巻いた鰯(イワシ)の砧巻(キヌタマキ)、更には薫香が付けられた大間の本鮪並みの㌔7,000円も下らぬ豊洲直送の島根県産の『迷い鰹(マヨイガツオ)』へと繋がれました。焼物には立派な八戸産の『太刀魚(タチウオ)』の塩焼、蒸し物には『あわび』の玉締めで表面には北海道産の『バフン海胆(ウニ)』と消しゴム程の厚みのある『黒あわび』更には中にも『黒あわび』、『河豚(フグ)』の『白子(シラコ)』の蒸しずし、そして口の中で歯を立てずともトロケ消えてゆく北海道産の『鮟鱇(アンコウ)』の『肝(キモ)』を味わい前半の酒肴の部は終了。そして後半のにぎりは酢の酸味を強めに感じる赤酢(アカス)の舎利(シャリ)を使い所謂、銀座サイズの大きさのにぎりで舎利は一貫15㌘〜17㌘程。『白川』と呼称される『白甘鯛(シロアマダイ)』の昆布〆(コブジメ)からはじまり八戸産の『真鯖(マサバ)』の松前(マツマエ)、青森佐井村産の天然『本鮪(ホンマグロ)』の赤身(アカミ)に脳天(ノウテン)から背の部位で筋が強いところを柵にはせずトロ独特の強くて厚い筋を剥がし取る筋と筋の間の身である超稀少部位のトロにも勝るとも劣らないハガシ、ナカズミサイズの『小鰭(コハダ)』、八戸産の『鯣烏賊(スルメイカ)』の『海胆(ウニ)』のせ、愛知県産の香り高い『赤貝(アカガイ)』、江戸前の仕事がしっかり施された『煮蛤(ニハマグリ)』に『車海老(クルマエビ)』にふわっとろの『煮穴子(ニアナゴ)』に『玉(ギョク)』、厚葉の『若芽(ワカメ)』吸物で〆。いただいた日本酒は寶剱からはじまり山形正宗、日高見、作にAKABUを差しつ差されつで酒杯を重ねナイトキャップの一杯は濃い目に作ってもらったハイボールでホロ酔いで気持ち良くなったところで散会となったのでありました。
