ABSTRACT Stress associated with commercial trawling of Atlantic cod was evaluated together with t... more ABSTRACT Stress associated with commercial trawling of Atlantic cod was evaluated together with the effects of live storage (0, 3 and 6 h) on the blood pH, glucose, lactate, muscle pH, and mortality. Additionally, the commercial method of direct gutting, used to process fish on-board, was compared to live storage fish that was percussively killed, bled by throat cutting and exsanguinated for 30 min prior to gutting. Visual quality defects related to capture, such as discoloration, net marks and blood spots were evaluated both on whole fish and fillets. The haul duration influenced the survival rate (mean ± SD: 73.2 ± 19.6%), elevated the lactate levels (mean ± SD: 5.22 ± 2.54 mmol L−1) and declined the blood pH (mean ± SD: 7.05 ± 0.16) and muscle pH (6.97 ± 0.16). The hauls with the highest mortality, the lowest initial blood pH (mean ± SD: 7.05 ± 0.16; P < 0.05) and the ones that showed an elevated blood lactate (mean ± SD: 5.22 ± 2.54 mmol L−1; P < 0.05), were the longest hauls in duration (>5 h) and had the highest catch (>10 tonnes). The fish recovered during live storage, but the haul size and duration influenced the blood and muscle pH significantly even after 6 h. After slaughter, it was observed that 52% of examined fish had catch related damages; red discoloration, net markings and skin scratches. The commercial processing method resulted in a significant (P < 0.05) increased in muscle discoloration, compared to fish that was bled immediately. The 3 h live storage increased the muscle discoloration significantly (P < 0.05). However, after 6 h live storage, most of the red discoloration was removed and the fillets were considerable lighter. This clearly shows that fish are able to redistribute blood from the white muscle during recovery and that the haul duration influenced the mortality, muscle and blood chemistry. Thus, the time from capture to bleeding and recovery are important factors in order to improve flesh colour of trawl caught cod.

Det var også et delmål å dokumentere andre ulikheter i produktkvalitet avhengig av råstoffets rigortilstand ved filetering, som krymping, filetspalting, farge og konsistens. Levendefanget vill torsk som hadde vært foret med lodde i ca ¾ år ble etter skånsom slakting filetert enten pre-rigor umiddelbart etter slakting, i-rigor 2 døgn etter slakting eller post-rigor 4 døgn etter slakting. Etter filetering ble filetene kjølelagret i inn til 12 døgn. Prøver til analyser av mikrobiologi, TVN, sensorisk kvalitet, pH, vann, protein, aske ble tatt ut hvert andre døgn gjennom lagringsperioden etter filetering. Formålet med prosjektet har vært å utprøve nye utvanningsmetoder for saltfisk filet med tanke på ... more Formålet med prosjektet har vært å utprøve nye utvanningsmetoder for saltfisk filet med tanke på å effektivisere utvanningsprosessen samtidig som produktets sensoriske egenskaper blir bevart. Ved bruk av følgende utvanningsprosess ble målene om et jevnt saltinnhold på 2-4 % samt akseptabel sensorisk kvalitet oppnådd. Fullsaltet filet ble vasket før skinnet ble fjernet. Filetene ble så stikkinjisert i to omganger på skinnsiden. Filetene ble stikkinjisert med vann ved 1,0 bars trykk og 3 millimeter tykke nåler. Videre ble filetene vakuumtromlet i 120 minutter etterfulgt av justering i 2 % saltlake i ytterligere 120 minutter, total utvanningstid 4 timer. Under justeringstrinnet vil en oppnå en jevnest fordeling av salt dersom trommelen blir rotert under justeringen. Ved å bruke denne nye metoden kan en oppnå ferdig utvannet saltfisk filet med jevnere kvalitet etter rundt 4 timer enn tradisjonelt utvannede produkter som må utvannes i stillestående vann i 1-2 døgn

For å kunne gjøre dette kreves det standardiserte metoder og verktøy, basert på kvalitetsegenskaper i råstoffet som har betydning for produktkvaliteten og økonomien i produksjonen. Dette var bakgrunnen for at prosjektet ”Kvalitetsfeil i råstoff (torsk) levert fra kystflåten” ble gjennomført i 2002 og 2003, med Fiskeri- og Havbruksnæringens Forskningsfond, Norges Forskningsråd og Norges råfisklag som oppdragsgivere. Rapporten diskuterer begrepet råstoffkvalitet og beskriver ni ulike kategorier av fangstskader som kan oppstå på ferskt råstoff (torsk), fisket med vanlige redskapstyper i kystfisket, som garn, line, snurrevad og juksa. Rapporten beskriver også en mulig metode for sensorisk vurdering av fangstskader på ferskt kjølt råstoff
