The purposed of the research was made soy sauce that more nutrious in iron and protein, especially. The result showed that adding of saren trend to increase in protein hydrolysis. Adding of 30% (w/w) saren on pre-fermentat ion produces better nutrition soy sauce in protein, amno acid essentials (AAE), and iron content. The product contains protein 5.64%, nine types of amino acids essential, iron 7.565 mg/100g, and better in hedonic sensories.
