Sweetness

Sweetness is one of the five basic tastes and is universally regarded as a pleasurable experience, except perhaps in excess. Foods rich in simple carbohydrates such as sugar are those most commonly associated with sweetness, although there are other natural and artificial compounds that are sweet at much lower concentrations, allowing their use as non-caloric sugar substitutes. Examples of foods that may be used as non-sugar sweet substitutes include saccharin, aspartame, acesulfame potassium, sucralose, xylitol, erythritol, and stevia. Other compounds, such as miraculin, may alter perception of sweetness itself.

The chemosensory basis for detecting sweetness, which varies between both individuals and species, has only begun to be understood since the late 20th century. One theoretical model of sweetness is the multipoint attachment theory, which involves multiple binding sites between a sweetness receptor and a sweet substance.

Sweetness of wine

The subjective sweetness of a wine is determined by the interaction of several factors, including the amount of sugar in the wine, but also the relative levels of alcohol, acids, and tannins. Briefly: sugars and alcohol enhance a wine's sweetness; acids (sourness) and bitter tannins counteract it. These principles are outlined in the classic 1987 work by Émile Peynaud, The Taste of Wine.

History

Vintage: the Story of Wine, by Hugh Johnson, presents several methods that have been used throughout history to sweeten wine. The most common way was to harvest the grapes as late as possible. This method was advocated by Virgil and Martial in Roman times. In contrast, the ancient Greeks would harvest the grapes early, to preserve some of their acidity, and then leave them in the sun for a few days to allow them to shrivel and concentrate the sugar. In Crete, a similar effect was achieved by twisting the stalks of the grape to deprive them of sap and letting them dry on the vine—a method that produced passum and the modern Italian equivalent, passito.

Sweeter (album)

Sweeter is the fourth studio album by American singer-songwriter Gavin DeGraw. The album was released in the United States on September 20, 2011 and features tracks co-written with other artists for the very first time, including Ryan Tedder, Butch Walker and Andrew Frampton. The lead single, "Not Over You", co-written and produced by Ryan Tedder, was released to mainstream radio and to iTunes in May and was a chart success. The album received generally favorable reviews from music critics and received a moderate impact on the charts.

DeGraw defined the album as "more refined yet edgier sound". He revealed to The Examiner that "For this album in particular what happened was there were things that I did musically that I recorded that I hadn’t recorded before. Continuing he explained, "Some of the types of singing that I’m doing on this album, I’ve done it live but I’ve never actually recorded it this way." DeGraw also described the album as "just funkier and more sexy than the albums I’ve made in the past. Not that every song is about bumping and grinding cause that’s not at all the record I’m saying I made. It’s just a sexier more intimate type of album.”
