These paleo-friendly zucchini pancakes are not only easy to make but are high in quality fats, dietary fibre and antioxidants to increase satiety, stabilise blood sugar levels, aid digestion and protect against free radicals.

Serves: 1

1 tbsp nut butter (peanut or almond), melted1 egg3 tbsp almond meal⅛ tsp baking soda¼ tsp Nature Sweet½ tsp4 tbsp unsweetened almond or coconut milk1 zucchini, grated (excess water squeezed out)1 tbsp extra-virgin olive oil½ cup berries, to serve (optional)
