Clever Christmas LEFTOVERS
TURKEY ENCHILADAS
SERVES 6 PREP AND COOK: 55 MINS
500g leftover roast turkey, cut into 2cm pieces
2 cups grated cheddar cheese
2 green spring onions, finely chopped
2 tblsps chipotle seasoning
250g tub sour cream
6 x 20cm flour tortillas
SALSA
2 x 400g cans chopped tomatoes
½ cup chopped fresh coriander
¼ cup drained pickled jalapeños, finely chopped
1 To make salsa, place all ingredients in a large jug. Season with salt and pepper. Mix well.
2 Combine turkey, ½ cup of salsa, 1 cup of cheese, onions, seasoning and ½ cup of sour cream in a large bowl. Mix well. Divide mixture and spread down the centre of each tortilla (about ¾ cup each). Roll up to enclose.
