MORNING GLORY MUFFINS
Makes 14-16 standard muffins
Chock-full of nuts and fruit, these muffins are both hearty and delicious. Fabiana of Ciao Newport Beach includes orange zest for a little zing.
INGREDIENTS
1 cup vegetable oil (or butter or coconut oil)
3 eggs
1 teaspoon vanilla extract
2 cups grated carrots
1 Granny Smith apple, unpeeled and grated
1 (8-ounce) can crushed pineapple, drained
½ cup pecans (or walnuts), roughly chopped
½ cup shredded coconut
½ cup raisins
1 tablespoon grated orange zest
2¼ cups all-purpose flour
1 cup sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt
INSTRUCTIONS
1. Preheat oven to 350°F. Line muffin-pan cups with paper liners.
2. In a large bowl, whisk together oil, eggs and vanilla. Add carrots, apple, pineapple, pecans, coconut, raisins and orange zest, and stir together.
