ith the species of deer we have on the estate — and the full-on nature of culling females through the winter season — time off is hard to come by. Christmas is a real treat that offers me a moment to forget about stalking, allowing me to concentrate on family, friends and, of course, over-indulging on roasted meat other than venison.
