Demand for insect protein is surging, with the total production of the global insect-farming industry set to jump 50-fold from 2021 to half a million metric tons by the end of this decade, according to a report by Rabobank. Many will find the idea of eating insects rather gross – but not everyone. Humans have been eating insects – adult specimens, eggs, larvae and pupae – since the dawn of time. Today, some 2,205 insect species are happily eaten by about two billion people around the world, according to a recent academic survey in the journal
