TIGANITES

Did you know that the Ancient Greeks invented pancakes? Tiganites most likely have their origins in an ancient Greek pancake known as teganites, a recipe for which still exists thanks to the physician Galen. According to Galen, they would have been served nice and hot with plenty of honey. For this modern version, only the yeast and sugar differentiate it from its ancient counterpart. A variety of additions can be made to tiganites, depending on the tastes of the chef. The ones pictured here, for example, contain raisins and polenta.
