Components
Wine is made after yeasts convert juice sugars into alcohol. Different wine styles use different winemaking process. For example, all grape table wines can be made white but if the skins from red varieties are left in contact with the juice (or must) during fermentation then the color will leech and make red wine. Below are the basic components of grape wine:
Water: about 85%
Alcohol: 9-15%; ethyl alcohol; ethanol
Acid: about .06% with pH level between 3-4
Tartaric: acid crystals that fall out after cold stabilization
Malic: will impress green apple characteristics
Citric: not normally detectible in grape wine
Lactic: converted from malic acid (referred to as malolatic fermentation); creamy/buttery
