    I often think about how I ended up where I am today, and I’m amazed at how much it’s been shaped by cannabis. My journey pivoted in 2015 when I naïvely joined a high-intensity bootcamp workout with my then boyfriend (who is now my husband.) I herniated a spinal disk within the first week of class.

    My doctor prescribed a mixture of opioids and acetaminophen, but my adverse reactions to these, on top of the chronic back pain, were too much to handle. In desperate need of relief, I tried the cannabis-infused treats my roommate offered to me. And for the first time in a long time, I slept like a baby. The next day, I found myself spending hours upon hours researching this plant and how to make my own infusions.

    Since we lived in a strict no-smoking building, I needed to be very discreet with the wafting scent of cannabis; this meant that using a Crock-Pot or cooking on the stovetop was not in the cards. At the time I was a creative director of a sous vide start-up and thought I’d put our machines to the test; thus, Sous Weed® was born.

    Sous vide (pronounced sue-veed) refers to the process of placing your food in a sealed bag or airtight jar and cooking it in a pot of water at a very precise temperature. Since the cannabis and oil are sealed up and placed underwater to infuse—there’s no smell! With a sous vide machine, there’s no need to babysit an open flame. You can walk away and go about your day without worrying about overcooking your cannabis.

    Feeding people has always been my love language. I was excited to test my creations on friends and share my recipes online. Documenting my sous vide cannabis experiments not only helped me manage my back pain in a less invasive manner but also kept me in a positive and creative headspace.
