    APPETIZERS

    Deviled Eggs

    6 boiled eggs

    1 tbsp. mayonnaise

    1 tsp. mustard

    1 tsp. dry mustard

    Salt, pepper, and paprika to taste

    Sliced pickled jalapeños (optional)

    Bring water to a boil and boil eggs for 10–11 minutes. Cool them in cold water. Cracking eggs in cold water makes the eggs peel easier. After peeling, cut eggs lengthwise and place yolks in a separate bowl. Salt and pepper mashed egg yolks to taste. Mix in mayonnaise and both mustards. Sprinkle paprika over eggs. I place sliced pickled jalapeños on each deviled egg. This serves 2 eggs per person.

    Green Chili Artichoke Dip

    2 c. mayonnaise

    2 c. sour cream or 1 pkg. cream cheese

    1 c. green chili, cooked (or 2 cans)

    2 c. artichoke hearts, chopped

    1 pkg. parmesan cheese

    1 tsp. lemon juice

    1/2 tsp. salt

    Dash black pepper

    Preheat oven to 350 degrees.

    Mix all ingredients in a casserole dish. Bake for 20 minutes or until it bubbles. Serve with tortilla chips or wheat thins. This makes dressing for roast beef sandwiches with spinach and sliced cucumbers.

    Creamy Spinach Dip

    1 10 oz. pkg. frozen chopped spinach, thawed and drained

    1 c. mayonnaise or salad dressing

    1 c. sour cream

    1/2 c. parsley, chopped

    1/4 c. green onion, sliced

    1 tsp. dill weed
