There are many reasons. First, for continuity between takes - they need to have the same amount of food on the plates. The food gets cold, gross, and may go bad and make people sick. Through many takes, they would get very full. Talking with their mouths full is gross. And often, the food is not real and you don't want them eating painted wood, ceramic, etc. Also, acting is a skill and the actors are performing every moment; they need to focus on their dialogue as well as physical acting, which would be severely impeded by consuming food.

It's not known exactly what is in the letter since Howard didn't want to know. But, Sheldon did tell everybody but Howard since Sheldon read the letter by accident. In order to get around the issue of Howard not wanting to know, but feeling betrayed that his wishes of not opening the letter were not respected, a plan was devised that each person would tell Howard something different regarding what was in the letter, only one of which was true, without telling Howard which ones were false. The contents were revealed as follows:

Raj: It was a Birthday Card that said "Happy Birthday Howard. Love, Dad"

Sheldon: It was a map leading to the whereabouts of the treasure of famed pirate One Eyed Willie (Howard immediately identified that as the plot of "The Goonies")

Amy: Howard didn't know it, but his dad was in the audience when Howard graduated from High School and he cried because he was so proud of him

Penny: It was a letter revealing that Howard's dad wasn't who he said he was. Eventually his other life caught up to him and the only way he could keep Howard and his mom safe was to leave.

Leonard: It was a letter explaining the importance of family and how it should never be thrown away like his dad threw it away

Bernadette: It was a picture of Howard's dad holding him on the day Howard was born. On the back was written "Howard my son. My greatest gift."
