I love love love this salad! It has so many crunchy elements (the pecan pepita brittle is just 🙌) and it just tastes like fall.

To make it a full meal, you can add a protein of choice (grilled chicken is great!) and even a grain like wild rice or quinoa to make it extra filling. If you add one or both, you may want to 1.5x the vinaigrette to make sure you have enough!

The brittle is absolutely addictive and we actually love it as a snack too!
