NAGOMI STANDARD OPERATION PROCEDURE

Food Allergies
Food Allergies is a serious issue. Do not take it lightly
If a guest has made known to you on food allergy or dietary needs, ask questions
to ensure you understand the request such as, Mr. Tan, you are allergic to
prawn. Are you allergic to any other kind of seafood? Asking questions will
clarify for you what the guest can and cannot eat.
With any allergy or dietary need you must:
Exlain to the chef ersonally the request.
Inform your manager of the secial request.
Food and !e"erage staff should !e knowledgea!le a!out all items on the menu
and reared to handle any dietary request. If you are uncertain, exlain to the
guest you will check with the chef and return with the answer !y saying, Mr.
Tan, I am not certain whether the sauce for the salmon has butter. lease let me
check with the chef and I will return with the answer for you.
