Kitchen Newsletter January 2013

Happy New Year to the students, staff and families of Wolfville School! We hope everyone had a relaxing and funfilled holiday. In January we will be offering Billy Bobs Pizza on Mondays. For only $1.50 you can get an elementary slice of cheese, veggie or Hawaiian pizza with milk. Add some Veggies and Dip or a Fruit Cup for only $1.00 more to make it a balanced meal. Tuesdays soup offering for January will be Chilly Weather Chili with crackers. Our vegetarian chili is chock full of delicious vegetables and beans, and topped off with a dash of cheddar cheese. Crackers will come with the chili. Wednesdays will be Creamy Mac & Cheez day! This perennial favourite is coming with a serving of veggies on the side to make this a complete meal. Baked Potato with Ham and Cheese will be the offering on Thursdays. If you would like to make this a vegetarian option it is possible to place your order in the morning and request no ham. Fridays are Sandwich Day and this month I am serving up Chicken Salad Sandwich, served with fresh veggies. We hope everyone enjoys our menu choices for the rest of the school year. Eating In Season
Kale is a hearty leafy green available during the winter months -It is best when harvested after a first frost which increases its sugar content. -Buy firm stalks and crisp dark green leaves Smaller leaves will have a milder flavour than the larger leaves. -Kale is great to eat raw due to its leafy tenderness. -Kale is available at the Wolfville Farmers Market, Saturdays 8:30-1:00 Recipe and Fun Facts from Acadia University Nutrition & Dietetics Program and Wolfville Farmers Market

Crust-less Kale Quiche


4 oz. Ham or Bacon 1 tbsp. Vegetable oil 1 Onion (small) 2 Garlic cloves 6 cups Chopped Kale cup Water (tap!) 4 Eggs cup Milk cup Whipping cream Pinch Salt Pinch Pepper

Elementary Students are reminded that they are to order recess snacks and lunch items in their classrooms in the mornings. All items will be delivered to the classrooms. Middle School students are to order their hot lunches and bagels at the canteen at recess. They can be picked up at lunch time. Thanks for your help!

1. Fry ham or bacon over med-high heat until crisp, drain off fat if bacon. 2. Add oil: fry onion and garlic over med. heat until golden. 3. Add kale and water: cover and cook until wilted. Uncover and fry for 1 min. In bowl whisk eggs, milk, cream, salt and pepper. 4. Spoon out servings of kale/onion/garlic mix into muffin cups. Add appropriate amount of egg mixture, sprinkle with cheese. 5. Bake in 375 degree oven for about 15-20 mins, or until knife comes out clean. Cool on rack for 10 mins.
