at 1: I love to tinker so thought I would share a couple of mods I have done. As for the heat, pay attention, change the draught, add charcoal,
whatever is needed. Jon I think there are a lot of folks here interested in what you are doing. The coals sit on the grate and air is able to get to the
coals from below. I sometimes put wine or beer in the water tray,any red wine or beer will work, but I do have to keep an eye on water tray to
