DIALOGUE FOR PERFORMANCE TEST
SEQUENCE OF TABLE SERVICE
1. Welcoming/ greeting the guest – welcome the guest with a pleasant attitude, warm smile and eye contact Say: “Good morning sir/ madamme. Welcome to (name of restaurant). Do you have reservation?” If with reservation Say: “May I have your name please?” (wait for the guest to tell his/her name) “Please be seated for a while, I’ll check the details of your reservation, excuse me ma’am/ sir. (after checking the booking sheet) “Mam/ Sir, you reserved table for 1, this way please.” If without reservation Say: “For how many person ma’am/ sir?” (wait for the guest to tell the number of guests) “Okay ma’am/ sir, this way please.” 2. Seating the guest – walk ahead of guests when ushering them to their table. Do not get too far. 3. Filling of water 4. Presenting the menu Present it with cover facing the customer. 5. Taking orders Ask the guest if they are ready to order. Say: “May I take your order mam/sir?” Write down the order in an order slip in triplicate (for the kitchen, cashier and waiter) 6. Suggest orders Make an effort to complete the meal. Suggest the missing item. For example: suggest an appetizer, soup, salad, dessert or beverage to complete the main dish. If the order is out of stock, tell the guest outright that his order is not available. Suggest any available substitute. If the guest ordered for a steak Say: “How would you like your steak done? Rare, medium rare or well done?” If the guest ordered for an egg Say: “How would you like your egg done sir? Poached, boiled or sunny side up?” 7. Repeat the orders As you repeat, mention the items ordered, number of orders and the manner of preparation. Example: “You have ordered for a cream of mushroom soup, a steak- well done, poached egg and mango smoothie.” Place the order to the kitchen. One copy to the food checker. One copy for the kitchen. 8. Complete the table set up (mis-en-place) Remove unnecessary chinaware, silverware or glassware. For example, the guest does not order soup remove the soup bowl or if the guest ordered for a red meat remove the white wine glass. 9. Serving the bread Bread is not included in the bill of the customer. It is complimentary. As you serve the bread, say: “Mam/ sir, this is your complimentary bread.” 10. Serving the food (according to sequence) As you serve the food, always tell the guest what dish is being served. Say: “Excuse me mam/sir, this is your steak- well done.” 11. Clearing the tables Be sensitive enough to know what 12. Presenting/ setting the bill Say: “Excuse me mam/sir, this is your bill.” (wait for the guest to check the bill and insert the payment to the bill folder) If the guest gave cash payment Say: “I received one thousand pesos mam/ sir. Please wait for the change and the receipt.” If the guest gave a credit card Say: “I received a Metrobank card mam/sir. Please wait for the receipt.” 13. Bidding goodbye say: “Thank you for visiting our restaurant, please come again!”
