The following are the steps in assembling and decorating a simple layer cake.
• Rotating cake turntable: Not essential but will make your task significantly
easier.
• Serrated cake or bread knife: For leveling and splitting layers.
• Offset palette knife: For applying frosting without dragging your fingers
through it.
• Pastry bag with tips: For cake decoration
• Cake smoother/scraper: For smoothing frosting and making decorative
markings and patterns.
• Cake board
b. Prepare all ingredients and note the proper temperature. Cool cake layers
completely before assembling and icing. Icings and fillings should be spread out and
at the correct temperature.
Step 2: Level your cake
To make it sturdy put/ apply icing on the base to keep the bottom layer of
cake from moving around.
Place the bottom layer upside down (to give a flat surface for the filling) on a
cardboard cake circle of the same diameter.
Place the cake at the center of a cake turn table this will make cake decorating
much easier if not available, use a plate on an inverted bowl
Step 4: Spread the filling
Place the first layer of cake on the base and spread filling out to the edges.
Then place the second layer on top and press down gently.
If the filling is different from the outside frosting, be careful not to spread the
filling over the edges.
One way to avoid spilling the filling over the edge is to pipe a row of the icing
used for the cake sides around the edge of the cake layer to form a barrier to
hold the filling inside.
Cover the cake with a thin layer of frosting/icing it ensures that the final layer
of frosting looks spectacular.
Put the cake in the fridge for about 30 minutes until well-chilled and firm.
Step 6: Ice the cake
Decorating a cake usually involves covering it with some form of icing and
then using decorative sugar, candy, chocolate or icing decorations.
