HOW TO PREPARE AND PROPERLY COOK THE CHICKEN

Preparing Chicken Wings

 Wash hands
 How to clean chicken wings
 Rinse wings
 Check the chicken wing for feathers or anything else that needs to come off. Pluck the feathers
and clean the chicken with your fingers while still under the faucet.
 Remove the wing fgrom the water and shake it off drying it as best as possible with a paper
towel.
 Place the chicken in chopping board
 Using knife cut the chicken wings into half
 Put pieces of chicken in storage pan
 Using knife cut the chicken wings into half

Breading Procedure:

 Wash hands
 Bring chicken to breading container
 Spread the chicken piece into breading
 Alternately scoop and fold
 Scoop all pieces of chicken into breading basket
 Use a gentle seesaw motion to remove excess flour
 Put pieces of chicken in cold water and bring back to breading flour (Double breading
procedure)
 Alternately scoop and fold
 Scoop all pieces of chicken into breading basket and put in a food pan
COOKING CHICKEN PROCEDURE

 Preheat oil
 Stir shortening twice to level the heat of oil in pan
 Drop chicken pieces into the oil (first drummets next wingette)
 Cook within 10 minutes (15pcs wings) – 15 minutes (20pcs up)
 Drain chicken before serving
 Do not forget to strain the oil using strainer (fine mesh)

HOW TO MAKE BREADING MIX ^ DIP MAYONNAISE

How To Make Breading Mix

(put all ingredients in a bowl or any container mix using wire whisk)

 1 kilo flour
 1 kilo cornstarch
 1/8 cup iodized salt
 1 Tbsp. ground pepper
 1 Tbsp. grams garlic powder
 1 Tbsp. paprika powder

How To Make Dip Mayo

(put all ingredients in a bowl or any container, blend using stick blender/blender)

 1 Kilo regular mayonnaise


 ½ liter tap water/ 500ml
 ½ kilo lady’s choice mayonnaise
 1 Tbsp. iodized salt
 ½ Tbsp ground pepper
