Breading Procedure:
Wash hands
Bring chicken to breading container
Spread the chicken piece into breading
Alternately scoop and fold
Scoop all pieces of chicken into breading basket
Use a gentle seesaw motion to remove excess flour
Put pieces of chicken in cold water and bring back to breading flour (Double breading
procedure)
Alternately scoop and fold

COOKING CHICKEN PROCEDURE
Preheat oil
Stir shortening twice to level the heat of oil in pan

Cook within 10 minutes (15pcs wings) – 15 minutes (20pcs up)
Drain chicken before serving
