It was a fine sunny day. The peacock and his best friend, the crow, were sharing

have.” The peacock realized how selfish his thought was. He realized that he was

6 candlenuts 4 Indonesian bay leaves (daun

6 cloves garlic 5 cm piece galangal, shredded
2 tbsp. coriander seeds 2 boiled eggs
5 teak leaves (daun jati) 2 large pieces deep fried tofu
300 g young jackfruit 4 pieces tempeh
500 ml coconut water chilies, finely sliced, to garnish
500 ml coconut milk fried shallots, to garnish
¼ cup palm sugar, shredded white rice, to serve
1 tbsp. salt
Instructions
1. In a food processor, blend the candlenuts, shallots, garlic, and coriander seeds
into a paste.
2. Layer the wok with 3 big teak leaves. Add in the young jackfruit.
3. Pour in the coconut water and coconut milk followed by the shredded palm sugar
and a tablespoon of salt. Add the paste that you’ve made earlier. Add in the bay
leaves (torn) and galangal. Cover the wok with another teak leaf and leave to
simmer for 2 hours. The leaves will give natural brownish-red colour to the gudeg.
4. Remove the teak leaf, add in boiled eggs, cooked tofu and raw tempeh, cover
with the teak leaf and cook for another hour.
5. Serve the gudeg with rice shaped using a rice cone mould. Garnish with fried
shallots and sliced chily.
