Cassia Vera

Cassia bark comes to the factory in its raw form. Upon drying, they curl inwards from the outer edge into
round sticks. Usually it is single curled because of its thickness. Thin bark can curl from both edges making it
double curled sticks. The length of the sticks may be up to 1m and thickness of bark is between 1-4mm. Sticks
are sorted manually in different grades depending on its thickness, colour and quality. Curled sticks are cut
into required lengths from 6cm to 60cm. Other sticks are used as broken chips or grinded into powder.

Indonesian Cassia sticks can be distinguished from Ceylon cinnamon sticks in the following manner: Ceylon
cinnamon sticks have many thin layers and can easily be made into powder using a coffee or spice grinder,
whereas cassia sticks are extremely hard and are usually made up of one thick layer.

Packing: Cut Sticks are packed in 1kg plastic packets, put into 20kg or 25kg strong cartons.
Storage & Shelf Life: Recommended storage temperature is between 15-19ºC and relative humidity is between
50%-60%. Cassia attracts insects due to its sweetness hence it is required to fumigate this spice regularly and
store in clean dry place.

Damar Gum (Damar Batu)

Damar Batu is a yellowish – brown colored, stone-shaped hard resin, obtained from a particular variety of the
dipterocarp species. The resin is obtained through collection of the hardened resin exudates lying below the
ground in fossilized form, close to the tree roots. The collected resin is then cleaned to remove mud and dirt
residue and then sun dried.

The quality of commercially traded Damar Batu is determined mainly by the size of the resin pieces, their
colour and the amount of damar dust accompanying each lot. Larger sized pieces (above 3 inches) of yellow to
brown colour 5% dust are considered to be of higher quality (Super/Bombay quality). This quality may then be
sub-classified as scraped or unscraped. Scraping of the Damar Batu basically means that additional cleaning is
done to each piece to remove external dirt. Small sized pieces (about 1 inch) of yellow to brownish-black
colour with up to 20% dust are normally found in the low quality range (Mixed/Calcutta quality).

Patchouli

The Patchouli plant thrives in the hot, humid temperatures of tropical countries and can be found growing
near rice paddies or in open fields. It is also commonly found growing near Coconut, Pine, Rubber, and Peanut
trees. The most common way of cultivating Patchouli is by planting cuttings from the mother plant after they
are placed in water.
As long as the Patchouli plant receives adequate sunlight and water, it can grow on flat or sloped land. When
exposed to high levels of sunlight, the leaves grow thick and small but contain a high concentration of essential
oils. Less exposure to sunlight results in leaves that are bigger but that yield a lower volume of essential oils.
Sufficient water drainage is necessary, as high water levels can cause the roots to decompose. The ideal soil for
growing the Patchouli plant is soft, not tightly packed, and is rich in nutrients and organic matters. It should
have a pH that is between 6 and 7. In this ideal environment, Patchouli can potentially grow to a height of 2
and 3 ft.

The young Patchouli leaves are steam distilled from the Pogosteman cablin species. The top 3 to 4 pairs of
Patchouli plant leaves are said to yield essential oils with the strongest aroma. Patchouli Essential Oil is usually
thick and ranges in color from light yellow to a deep amber or brown. This is one of the factors that contribute
to the oil’s improvement with increasing age. Its scent is comparable to wet soil, with a musky, earthy, and
slightly sweet fragrance that can further be described as smooth and rich.

Vanilla

True vanilla flavor comes from the cured seed pod (bean) of the vanilla orchid. The properly
prepared pod contains vanillin and 100s of other flavor compounds. Vanilla orchids are the only
orchids that produce an edible seed. The primary producers of vanilla beans are tropical areas:
Indonesia, Madagascar, Papua New Guinea.

There are two distinct types of vanilla orchid:

 Vanilla Planifolia beans have a strong, familiar vanilla flavor, it is often called ‘Madagascar
Bourbon’.

 Vanilla Tahitensis is a weaker vanilla with ‘fruity, floral, and sweet’ flavors created by the
compound heliotropin. Tahitensis is a mutated form of a planifolia orchid from Tahiti, though
most tahitensis vanilla is now grown in Papa New Guinea.
