TASK SHEET No.

Title: CINNAMON BREAD

Performance Objective:

Supplies/Materials:

1 T yeast
1 cup water
1 egg
½ cup sugar
¼ cup butter
¼ cup shortening
½ kilo (4 cups) AP flour + ½ tsp salt
½ tsp dough improver
½ tsp dough softener
filling
¼ c butter
½ c brown sugar
1 tsp salt
1/3 c raisins
Equipment : Oven

Steps/Procedure:

1. Put in a bowl 1 Tbsp yeast and 1 cup water.


2. Add in the following:
1 egg, ½ cup sugar, ¼ c butter, ¼ c shortening
3. Knead in the following until the dough is smooth and elastic:
½ kilo (4 cups) AP flour + ½ tsp salt
½ tsp dough softener
½ tsp dough improver
4. Transfer to a greased bowl. Cover and allow to rise in a warm place
until double in bulk – about 30- 40 minutes.
5. Punch down the dough. Roll out the dough to form a rectangle.
6. Brush with butter or margarine. Sprinkle with ½ cup brown sugar,
1 tsp cinnamon and 1/3 cup raisins.
7. Roll and seal the edges.
8. Slice crosswise into 1 ½ inch thick pieces.
9. Put on prepared pans.
10. Allow dough to rise for 45 minutes or double in bulk.
11. Bake at 350 -375 F for 10 – 15 minutes or until done.
