Lecture 7
The back of house team keeps things running smoothly behind the
scenes. They have minimal guest contact, either working in offices
separate from guest areas or in guestrooms when the guests are out.
Back of house (BOH) employees usually work during normal business
hours.
• Accounting
• Security systems
Kitchen is the center of all food preparation and production. In the Kitchen,
food and other items are:-
1) Received,
2) Stored,
3) Prepared and
4) Plated for services
Dishes and other items are cleaned and stored in the kitchen. Back of the
House staff consists of :-
• Managers
• Cleaning staff
