CHAPTER 1

BACKGROUND OF THE STUDY

Introduction

Merienda is a Spanish word that refers to a light meal or snack, especially

one that is consumed in the late afternoon or early evening. Merienda is a typical

cultural practice in many Spanish-speaking nations and areas that have been

impacted by Spanish culture, such as the Philippines and portions of Latin

America. Between lunch and dinner, it usually entails eating a light meal or

snack, which is frequently made up of foods like sandwiches, pastries, fruits, or

small meals. Although the idea of merienda is comparable to the English word

"snack," it frequently has cultural and social significance, since it is a time for

unwinding, mingling, or taking a break from work or other activities.

The hospitality industry encompasses a wide range of occupations, such

as restaurants and food and beverage services, and it offers a variety of services,

such as food and drink within the service industry. Businesses that offer snacks

or meriendas are included in this sector of the hospitality industry. D' Merienda

House offers a delectable assortment of appetizers as well as creating a

welcoming and comfortable atmosphere for both its customers and company.

The snacks are rich in health benefits because the company's products are made

with fresh and healthy ingredients. Their "Combo D' Sandwich" and "Combo D'

Burger" are two of their best-offer items. The first one is a nutritious chicken

coleslaw sandwich with a variety of healthy ingredients and a chosen juice, while
the second is a burger patty, veggies like lettuce, sauces, and a chosen juice. D’

Merienda House caters to all people of all ages live in Municipality of Tupi, South

Cotabato.

D' Merienda House aims to showcase trends in high-quality and

reasonably priced food. By offering excellent service and developing long-term

connections with consumers, this company promises to surpass clients'

expectations and satisfy their needs.

Objectives of the Study

This study aimed to determine the viability of establishing “D’ Merienda

House” in Barangay Poblacion, Municipality of Tupi, South Cotabato. Specifically,

it aims to:

Scope and Delimitation of the Study

This project examines the feasibility and potential success of establishing

a Merienda House, focusing on the local market situated along Tupi National

Highway, particularly in front of SEAIT School, targeting residents of Tupi, South

Cotabato. The study encompasses the evaluation of sales potential, market

demand, and consumer preferences for combo snacks and single snacks such

sandwiches, burgers, canapés, fries, breads, and juice.

The physical scope of the investigation extends to the restaurant

premises, covering a total area of 3,229.17 square feet. However, factors such as

macroeconomic trends, governmental regulations, and broader industry

dynamics are beyond the scope of this study. Additionally, the study does not

delve into the operational intricacies or financial projections of the proposed

restaurant.

Locale of the Study

The study will be conducted in Municipality of Tupi, National Highway

Barangay Poblacion, in front of the South East Asian Institute of Technology Inc.

School. We thought of building the business here because it is in front of the


school and it is also an advantage because our place is close to the highway and

it's easy to see, go to and find especially for those who drives and also for

tourists who visit the town of Tupi.

To the company, which might utilize this study as a tool to help with

decision-making, enhance current food products, and create new ones. This

could also give us a significant competitive edge over our rivals and help the

business achieve its goal of being well-known Merienda House in Tupi, South

Cotabato.

To the customers, they will be aware of the existence and current

standing of D’ Merienda House with a particular emphasis on individuals who

love eating snacks. They will be offered options to choose from that will fulfill their

needs and desires, as well as an expanded perspective.

To the community will gain knowledge about the store, its merchandise,

and the characteristics of the business. This could also give us an idea that D’

Merienda House is a really cozy restaurant that serves delicious food and has

attentive, friendly service within the community.

To the hospitality students that can use the study's findings as a guide

and reference to understand the topic and how it relates to the hospitality

business. Additionally, it provides them with ideas for making sure the hospitality

industry creates plans for improved service, particularly with regard to food and

beverage service.
To the suppliers will generate income by offering products or services to

consumers or other companies. Building a connection with clients who make

consistent purchases of products or services can give the supplier a reliable

stream of revenue. Successful providers have the ability to establish a powerful

presence within their business and build customer brand awareness.

Definition of Terms

The following terms are defined conceptually and operationally for better

understanding of this study.

Appetizer- a snack or beverage that increases hunger that is typically

offered prior to a meal. An appetizer is typically the small-portioned first dish of a

multi-part meal, served to compliment an entrée.

Food and Beverage Services- are services that supply food and drinks. It

is used to serve food and beverages to customers at venues such as restaurants.

It aims to fulfill the needs of the client while keeping in mind their want for

specialty foods.

Hospitality Industry- encompasses a wide range of occupations, such as

accommodation, food and beverage, restaurants, hotels, etc. A subset of

services that assist individuals who want to travel or visit specific locations for

leisure. Is a large category of companies that offer services to customers.

Merienda- any dish or snack that is lower in amount than the typical "full

meal," which consists of rice and a complimentary viand. It's a smaller, less
formal meal that's not consumed at the usual meal times—breakfast, lunch, and

dinner.

Restaurant- is a place of business where customer can buy food or

drinks. A type of company where menus for different types of food and drinks are

available. And would provide clients with friendly services and an elegant

atmosphere.

bus station public market. Patrons are treated to a sensory voyage of culinary

pleasures, ranging from handmade coffees to scrumptious pastries, all served in

a sophisticated atmosphere ideal for catching up with friends or enjoying a quiet

moment alone.

Supplies for burger buns and pans will be provided by L'artizan Bakery in

Polomolok, South Cotabato. Town Fresh is our patty and meat provider, for fries

supplied by Javier Trading, Roda merchandise, our fruit juice supplier in

Polomolok, South Coatabato. Marbel Quality Farm Supply Corp and KCC Super

Market is our fresh vegetables and fruits provider, Citi Hardware and

Construction Supply in Koronadal City will provide the supplies for the building's

construction, given that the necessary materials are available there. Culinary

supplies, cutlery, kitchen tools, furniture and other restaurant materials will

provided by OTR Korean Furniture Marbel.

Customer

D' Merienda House restaurant in Tupi, South Cotabato's possible

customers include Tupi residents, staff personnel, teachers, and students at the

adjacent Seait School, as well as travelers to Tupi who stop by after a long
journey. Given that the company is located next to a school and on a roadway,

they are the ones who are eligible to become members. Currently, there are

73,459 people living in Tupi, South Cotabato, and approximately 16,000 students

enrolled in SEAIT school, aside from the staff and teachers.

make profit as well as favorably compete with the competitors. For this to

be achieved, it has to ensure that the business structure is right, as this

will go a long way into determining the goals and objectives that the

business is going to achieve. Therefore, in getting the foundation right,

they should hire competent and also have the experience necessary to

help them achieve the goals and objectives. The employees must also

understand the core values, what the business stands for, and also be

Compensation Package and Benefits

The management of the proposed business shall comply with the

Department of Labor and Employment (DOLE) compensation law for the

regular employee. Every employee will enjoy the basic mandatory benefits

of SSS, Philhealth, Pag-ibig, and 13th month pay.

Depending on the position, all employees of the business

establishment will be paid in accordance to the mandates of Labor Code

of the Philippines for an eight ( 8 ) hour working days for six ( 6 ) days a

Company Policy

Attendance and Time-off Policies

The company's attendance standards specify when workers can take time

off and how to report absences or late arrivals to supervisors. Employees are

expected to arrive at work on time; a five-minute delay would result in a

twenty-odd peso salary decrease. Furthermore, if an employee arrives at

work thirty (30) minutes late, they will only be paid for a half-day rather than

ten (10) hours of work.


The penalties for not following a schedule were also outlined in this policy.

The employee is not permitted to miss work for three (3) days in a row

because this indicates that you are AWOL, or absent without formal leave.

The attendance policy outlines the disciplinary measures that will be taken

against employees who miss more work than what the company allows.

Employees are only permitted to miss work for two (2) consecutive days;

beyond that, they would be deemed AWOL.

the office early for a longer meal or break without permission, they are

considered tardy.

Time Clocks and Failure to Clock In/Out

Employees are required to follow established guidelines for recording their

actual hours worked. A missed clock in/out is a violation in company policy.

This includes:

 Failure to clock in/out on their designated time clock at the beginning

and/or end of their assigned time schedule.

 Failure to clock in/out on their designated time clock for the meal break.

 Failure to accurately and timely report time worked.

Quality Assurance and Hygiene Policy

Employees are responsible for maintaining high food quality, hygiene

standards, and timely service. Regular inspections and quality checks will

be conducted to ensure compliance with food safety regulations.

Employees shall adhere to the prescribed dress code and maintain a

neat and professional appearance at all times while on duty.

Health and Safety Compliance

Employees are responsible for maintaining a clean and safe

environment for both customers and fellow employees. They must follow

proper hygiene practices, adhere to safety protocols, and report any

concerns to management.

Conflict Resolution Procedure

promptly and professionally, following established protocols for resolution

and maintaining a positive work environment.

Terms and Condition

Quality- The restaurant ensures that every item on the menu satisfies the

concept's requirements. It is necessary to inform management right away if there

are any problems. We will take action appropriately as soon as we can.

Prices/offers- All prices of the restaurant food offers are all indicated in the

menu.
Payments- customers must pay first before taking meals from the sideboard or

side table where food is placed. We take two forms of payment: cash and G-

Cash. Order confirmation cannot be received until after payment has been

confirmed.

Liability- the responsibility of customers for their personal belongings, and they

should double-check and make sure of this before leaving restaurants.

products. Feast of Tea is the next rival, with 30% of the market, and has

been in operation longer than D' Merienda House. Furthermore, Cafe

Cerveza, our greatest competitor with 55% of the market share, is well-

known, has a significant client base, and is an established firm in

comparison to ours, which is new to the field. The market share is

identified by comparing the number of customers who visit and eat with

the three competitors.
