PRODUCTS
The products that we will be
presenting to you will be the
following:

•Yogurt

•Cheese

• Custard

•Ice cream

•Milk products

•Butter Milk
YOGURT

Although it can be obtained


from any type of milk, cow's
milk currently predominates
as a raw material. The
fermentation of lactose into
lactic acid gives yogurt its
acidity and some of its
flavor.

Yogurt is a dairy product


obtained by fermenting milk
by bacteria of the genera
Lactobacillus and
Streptococcus.
CHEESES

Cheese is a dairy derivative


that is obtained by maturation
of milk curds once the whey
has been removed; its different
varieties depend on the origin
of the milk used,the production
methods followed and the
degree of maturity reached. It
can be produced from the
curdled milk of cows, goats,
sheep, buffaloes, camels,
ruminant mammals

.For example, one of the most


consumed cheeses on the
market are: Manchego,
Mozarella and Cheddar
CUSTARD

Custard is a very widespread


dairy dessert in Spanish
gastronomy. It is a cream
made with milk, egg yolks,
sugar and aromas such as
vanilla or lemon.

This delicious Christmas dish


contains several nutritional
properties in its ingredients
that can vary with its
preparation and the infinite
variations it has, but in
general it is rich in iron and
calcium, it is also free of
trans fats, and it is very low
in sodium.
ICE CREAM
In its simplest form, ice
cream is a frozen food that is
usually made from dairy
products such as milk or
cream. It is usually
sweetened with sugar,
sweeteners or honey.

Typically, other ingredients


are added, such as egg
yolks, nuts, fruits, chocolate,
cookies, dulce de leche, as
well as flavorings, additives
and stabilizers.
MILK PRODUCTS

Milk and its derivatives are foods


that provide protein and energy,
depending on the amount of fat they
contain. For example, whole milk
provides more energy than semi-
skimmed or skimmed milk.

Some milk products are:


- WHOLE: contains all the nutrients.
- SEMI-SKIMMED: with half the
normal fat content.
- SKIM: does not contain fat.
- FORTIFIED: with added vitamins,
calcium.
- ENRICHED: with the addition of
nutrients that milk does not contain
in its natural state, such as omega 3,
fiber, phytosterols.
- LACTOSE FREE: with lower lactose
content.
BUTTER MILK

Butter is a more or less solid emulsion


considered suitable for human
consumption, product of the beating,
kneading and washing of milk fats and
water, with or without biological
maturation produced by specific lactic
acid bacteria. There are several types
of butter, but two can be distinguished:
Sour butter: after the acidification of
the cream (this is the traditional one).
Sweet butter: before the acidification of
the cream.

In addition, salt can be added or not,


obtaining salted or normal butter
depending on the case. And, of course,
it can be made from the milk of many
animals, the most common in the West
being sheep, cow or goat butter
