The influence of the sensory attributes on the acceptability was also determined. Juices with oligofructose (20 g/L) showed less sweetness than those with sucrose (20 g/L), while those with sucralose (0.03 g/L) had a lighter colour. Oligofructose or sucralose contributed to the increased acceptance (taste and overall impression) of the pure juices, making it similar to that of the sucrose-product. There were no differences in the acceptance of the appearance, aroma or texture. The probiotic increased the turbidity of the juice, however, it did not alter the acceptance (appearance, aroma,flavour, texture and overall impression). 27 meses de armazenamento e... more Objetivou-se avaliar o efeito do tempo pós-colheita do amaranto (3 e 27 meses de armazenamento em condições ambientais T média 27 º C e URmédia 80 %) nas características físicas de grãos e nas propriedades físico-químicas e funcionais de seus concentrados proteicos. Grãos com maior tempo pós-colheita apresentaram-se mais avermelhados e escuros, com maior acidez e umidade, além de menor capacidade de hidratação e solubilidade proteica em água em diferentes pH que os grãos mais novos. O concentrado proteico de amaranto proveniente de grãos com maior tempo pós-colheita mostrou menor rendimento (9,62 %) que o obtido de grãos mais novos (11,06 %), assim como menor solubilidade das proteínas em diferentes pH e menor capacidade de absorção de água ou óleo. Por outro lado, apresentou maior estabilidade da emulsão e da espuma. Não houve diferença na capacidade de formação de gel, espuma e emulsão e no perfil eletroforético das proteínas dos dois concentrados. Os iogurtes foram preparados usando cultura lática tradicional (Streptococcus thermophiluse Lactobacillus delbrueckii ssp.bulgaricus) e Lactobacillus paracaseissp. paracaseicomo probiótico. As formulações continham frutanos tipo inulina de DP: baixo (oligofrutose P95, DP 5), médio (inulina ST, DP 10) ou alto (inulina HP, DP 23), em uma concentração de 2g 100g de leite -1 , de modo a atender a legislação brasileira vigente e assim, utilizar sua alegação de propriedade funcional; e foram comparadas a uma formulação Normal (sem adição de frutanos tipo inulina). A adição de frutanos tipo inulina com diferente DP não alterou os parâmetros L*, a* e b* de cor, a sinérese e a viabilidade da cultura probiótica dos iogurtes. O objetivo deste trabalho foi avaliar junto aos consumidores da região Norte do Para... more O objetivo deste trabalho foi avaliar junto aos consumidores da região Norte do Paraná as crenças, atitudes e hábitos de consumo de culturas probióticas e produtos probióticos. Para isso aplicou-se um questionário a 100 pessoas, onde se verificou um baixo consumo deste tipo de produto. A avaliação de atitude revelou concordância que o consumo regular de produtos probióticos melhora o funcionamento do intestino, pode diminuir os níveis de colesterol, pode aumentar a absorção de cálcio proveniente da dieta e reforça os mecanismos de defesa do corpo. No entanto, os consumidores ainda acreditam que componentes funcionais, como os probióticos, têm capacidade de prevenir ou tratar doenças e não estão convencidos de que a sua ingestão não desencadeia reações adversas à saúde após o consumo. De uma forma geral, a atitude dos entrevistados foi positiva, porém, é recomendável reforçar a comunicação ao consumidor das alegações de propriedades funcionais e de saúde de culturas probióticas.

isso, aplicou-se um questionário a 100 pessoas, o que possibilitou verificar o baixo consumo deste tipo de
produto. A avaliação de atitude revelou concordância que as fibras alimentares são de grande importância
para o bom funcionamento do organismo, uma vez que não são digeridas pelo homem, possibilitando o
controle da obesidade e diabetes, aumento da saciedade e redução do colesterol. Além disso, os
consumidores apresentaram o conhecimento sobre os alimentos-fontes de fibras e da necessidade de seu
consumo diário. Entretanto, não tinham certeza se o consumo de fibras e staria relacionado com a
diminuição do risco de câncer de mama e que as fibras não fornecem calorias. De uma forma geral, a
atitude dos entrevistados foi positiva em relação às fibras e seus produtos, porém, é recomendável
reforçar a comunicação ao consumidor das alegações de propriedades funcionais e de saúde do consumo

This study aimed to evaluate the effect of the supplementation of clarified apple juice with prob... more This study aimed to evaluate the effect of the supplementation of clarified apple juice with probiotic Lactobacillus paracasei ssp. paracasei and/or oligofructose (prebiotic and sugar substitute) on the physicochemical characteristics, probiotic viability and on the acceptability during refrigerated storage (4 C for 28 days) in plastic or glass packages. Probiotic juices showed chemical composition, density, acceptability and purchase intent similar to products without supplementation but higher acidity, turbidity and red color. Supplementation with oligofructose did not change the physicochemical characteristics, acceptability, purchase intent and storage stability of the products, and enhanced the probiotic survival during storage. Oligofructose was stable to storage in apple juice and could be used as a sugar substitute as oligofructose added products had similar physicochemical characteristics and acceptability of the products with sucrose. The glass package was more appropriate than the plastic package in maintaining the viability of the probiotic culture, with no effect of packaging (glass or plastic) on the physicochemical characteristics and acceptability of juices.
