In our globalized world, nations that express or offer their own values have become more successful. Therefore, the culture of Turkish food and nutrition refers as the key of national culture. Therefore, it is very important to examine the characteristics of the Ottoman cuisine to introduce food culture. Traditionally Ottoman cuisine, soups, meat dishes, olive oil vegetables, salads and spices used in desserts are important. Nowadays, people want to learn not only the sense of hunger but also the history of gastronomy (all components depending on cultural and environmental influences). Bu araştırmanın amacı, X, Y ve Z kuşağı mensubu bireylerin Türk kahvesi tüketim alışkanlıklarını ve kuşak farklılığının bireylerin Türk kahvesiyle ilgili algıladıkları bilgi düzeyi üzerindeki etkisinin belirlenmesidir. Araştırmada, nicel araştırma yöntemlerinden anket tekniği uygulanarak kolayda örnekleme yöntemi ile 730 kişiden kullanılabilir veri elde edilmiştir. Elde edilen bulgulara göre, X, Y ve Z kuşağı mensubu bireylerin Türk kahvesini tercih etme ve etmeme nedenlerinde benzerlik ve farklılıklar olduğu saptanmıştır. Ayrıca kuşak farklılığının bireylerin Türk kahvesiyle ilgili algıladıkları bilgi düzeyi üzerinde istatistiksel açıdan anlamlı bir farklılığa neden olmadığı belirlenmiştir. Buna karşın, Türk kahvesi tüketim sıklığının katılımcıların Türk kahvesiyle ilgili algıladıkları bilgi düzeyi üzerinde istatiksel açıdan anlamlı bir farklılığa neden olduğu tespit edilmiştir.

Obesity has emerged as a global health crisis, contributing to numerous comorbidities including diabetes, cardiovascular diseases, and chronic inflammation. Although lifestyle modifications are recommended to prevent obesity, the increase of obesity in last years has revealed the importance of drug research. While bariatric surgery remains an effective approach, the limited number of approved pharmacotherapies for obesity necessitates further investigation into novel therapeutic agents. Currently, there has been growing interest in exploring the potential of plant extracts in the treatment of obesity. Phytoextracts, derived from a variety of botanical sources, have attracted considerable attention due to their therapeutic properties and perceived lower risk profile compared to synthetic pharmaceuticals. These extracts often contain bioactive compounds such as polyphenols, flavonoids, and alkaloids, which have been extensively studied for their anti-obesity effects. Research indicates that certain plant extracts can modulate weight control by influencing metabolic processes, overall health, and lipid metabolism. The integration of herbal extracts into obesity treatment regimens offers a holistic approach to health, presenting a natural alternative to conventional medicine. Moreover, plant extracts often exhibit pleiotropic effects, targeting multiple pathways involved in the pathogenesis and progression of obesity. This multifaceted mechanism holds promise for enhancing clinical outcomes while minimizing the risks associated with monotherapy. However, despite the evident potential, further research is essential to elucidate the precise mechanisms of action, optimize dosage regimens, and evaluate the longterm safety and efficacy of these interventions.

Background: Durum wheat [Triticum turgidum L. ssp. durum (Desf.) Husn.] is one of the most essential cereal species and is cultivated worldwide over almost 17 million ha, with a global production of 38.1 million tonnes in 2019 (Ioannis et al., 2020). Cereal grains have always been the main source of food for humans and domestic animals. In Algeria, cereal products, mainly wheat, play a strategic role in the food system and the national economy. Knowledge of the phenomena governing their preservation and mastery of storage techniques are crucial to the survival of the world's population. The world human population is increasing day by day and estimated to reach 8.0 billion by 2025 and 8.9 billion by 2050. Methods: The ideal of this work was to study the effect of natural aging on the viability and technological quality of four kinds of durum wheat, saved for two years under two storage conditions, favorable conditions in the cold room, temperature (-04C); moisture (12%) and inimical conditions (medium), temperature estimated between 11 and 37C and relative moisture of 30 to 85 83%. To do this, a study of morphological, physiological, biochemical and technological parameters was initiated on the seed and on the whole factory. Result: The protein content values recorded are low compared to the control under both conditions (favorable, inimical) of natural aging; the differences are veritably largely significant. A significant increase in proline situations in seeds subordinated to natural aging compared to the control. Under good natural aging conditions, we notice that the different genotypes tested record low answerable sugar contents compared to the control; whereas under inimical NA conditions, we note a s ignificant increase in answerable sugar content; the differences are veritably largely significant. The results attained show that, in general, the kinds are more sensitive to inimical conditions of natural aging, while without favorable conditions, the effect is less drastic.
