The leaves and flowers of this plant have been used for centuries in traditional medicine to treat various ailments such as cough, cold, diarrhoea, and constipation. Google Scholar, PubMed, Scopus, and Web of Science were used to search for relevant material on the phytochemical profiling and pharmacologic activities of Malva sylvestris. The techniques used in phytochemical profiling and the pharmacologic activity of each compound were extracted from the included studies, including in vitro, in vivo, and clinical studies. The phytochemical analysis of Malva sylvestris revealed that the leaves and flowers are the most commonly used parts of the plant and contain various bioactive compounds such as flavonoids, mucilages, terpenoids, phenol derivatives, coumarins, sterols, tannins, saponins, and alkaloids. Son utilisation dans cette zone passe par plusieurs traitements culinaires (ébullition, braise…) qui affecte certaines propriétés jusqu’ici non encore élucidées. Le présent travail était axé sur la valorisation de D. praehensilis au Cameroun par l’étude de l’effet de quelques traitements culinaires sur ses propriétés physico-chimiques, fonctionnelles et anti-oxydantes. This led us to optimize the fluidification capacity of two paddy rice varieties. For that, the Doehlert plane-type response surface methodology was used to optimize the germinating ability of paddy rice flour (varieties Nerica 3 and Nerica L56) to fluidize cassava-based gruels by using two factors: soaking and germination time. The evaluated response was the flow velocity of the gruels. The optimization result showed that, the optimal soaking time was 48 h for the variety Nerica L56 and 12 h for Nerica 3. Concerning the optimal germination time, it was 135 h for both varieties. These conditions have been found to have the best fluidifying capacities for cassava flour-based gruels. Flours and raw extracts produced were used to prepare fermented maize gruels (17.5% of DM) and the flow rates were evaluated using the Botswick consistometer. We noticed from these analyses that the germinated corn Coca-sr variety, in the form of ARF and its extracts presented an optimum fluidification power at 120 h of germination. As for the ARF of Nerica L.56, an optimum fluidification level was observed for the extract at 168 h contrarily to 72 h for the flour. The use of ARF and extracts from corn (Coca-sr) and rice (Nerica L.56) at 2 % and 2.5 mL resulted in a reduction of their consistency (gruels). Coca-sr ARF at a rate of 2 % fluidifies the gruel of fermented corn hence multipliying the energy density and nutritional value (3.57) more than with its extract and the different forms of the incorporation of rice.
