The grinding of spices at ambient temperature causes the loss of valuable heat-sensitive constituents. While higher investment and maintenance of cryogenic grinding make it prohibitive for small-scale industries. So, the present study was carried out to check the effects of low-temperature grinding on various phytochemicals of ground powder of fenugreek seeds. Water at ambient temperature, chilled water and coolant were circulated around the grinding chamber to lower the grinding temperature. Additionally, fenugreek seeds were fed at ambient and low temperatures (-100C). The temperature inside the grinding chamber at the end of grinding for three kg of fenugreek seeds ranged from 91.330C–53.330C for different treatments. A fall in grinding temperature resulted in the retention of a higher quantity of total phenol (7.71 mg g-1), total flavonoid (12.08 mg quercetin equivalent/g extract), antioxidant activity (21.29%) and volatile components in powder of fenugreek seeds ground by coola...

Water loss, solid gain, weight loss and moisture content of osmotic dehydrated onion (Allium cepa L.) were studied. The effect of temperature and time to onion slices during osmotic dehydration for the onion slices were optimized using response surface methodology (RSM). Increase in process temperature and immersion duration increases the solid gain, water loss, weight loss and decrease in moisture content. Process temperature had non-significant effect on solid gain, as well as significant at 5% level significance on water loss, weight loss and moisture content. Optimized values of temperature and time were 42.08°C and 111.13 min, respectively.U ovom istraživanju su ispitivani gubitak vode, čvrsti prinos, gubitak mase i sadržaj vlage kod osmotski dehidriranog crnog luka (Allium cepa L.). Potato (Solanum tuberosum L.) is an important crop in India. It is a primary source of starch for vegetarian diet. In India, it was cultivated in an area of about 1.83 million hectares with production of 34.39 Million Tonne in 2008-09, whereas in Gujarat in the same year it was cultivated in 57,000 hectares with production of 4.21 Million Tonne (www. agricoop.gov.in). There are about 35 potato processing units in Gujarat foods, Rajkot is one of the biggest units (www.potatopro.com). This unit was visited by the staff members of scheme, to get information about the utilization of potato peel a waste product of wafer making unit. The capacity of the plant is about 150 tonnes potato per day, and potato peels production is about 30 tonnes potato peel @ 200 g / kg potato. Presently the potato peels are mainly used as a composting material in farm as well as selling for the cattle feed (according to Balaji foods (P.) Ltd, Rajkot).

In CYBersecurity information EXchange (CYBEX) framework, Cyber Threat Intelligence (CTI) is shared among multiple organizations with a view of creating situational awareness. But there is a possibility that malicious organizations coexist with regular ones in this framework, which can get hold of the threat data shared by other organizations and can use it for carrying out malicious activities. We formulate the aforementioned problem as an incomplete information game assuming that whenever CYBEX receives any information, it processes the information for anomaly detection. We find the mixed strategy Nash equilibrium probabilities and corresponding Bayesian belief updates. We simulate the game to find the best response strategies with which regular and malicious organizations can play to increase their payoffs. Based on the best response strategies of organizations, we analyze that achieving more anomaly detection rate while keeping the processing rate minimum is the best action strategy with which CYBEX can play to increase the gain of both CYBEX and regular organizations over malicious organizations. We also find the approximate average minimum processing rate and anomaly detection rate with which CYBEX can play in order to maintain the payoff of itself and regular organizations higher than the malicious ones.

Onion bulbs are graded manually at farm and trader level.Manual grading of onion is a labour consuming and tedious operation coming with many losses. Therefore, the modern technologies, like automatic grading systems, are of utmost need. Grading is one of the most important operations affecting onion export. It determines the size of standard sale package, thereby increasing marketing attractiveness, and simplifies the mechanization of different handling systems, such as cutting and peeling. There are different types of onion graders available in the Indian market. These are of higher throughput (10 to 12 t/h) and highly expensive (costing Rs 10 lakh or more). Hence, they are not being used at the farm level as it is beyond the reach of ordinary farmers having small land holding who are growing onion crop. This necessitated to develop an efficient low cost grading machine for onion. The onion should be graded in the divergent rollers type onion grader at 15 rpm roller speed having 8...

GJP1 variety is newly developed variety of pigeon pea. It gives higher seed yield as compared to other varieties. Pigeon pea is mostly consumed in the form of splits hence, it is necessary to verify its hulling efficiency and utmost dhal recovery. Pre milling treatments are generally employed to loosen the seed coat to remove husk without losing any edible portion and better dhal recovery.  Xylanase, pectinase and cellulose enzymes were used to evaluate the milling properties of pigeon pea grains. Efforts were made to evaluate the effect of enzymatic parameters, i.e., enzyme concentration (20-50 mg/100g dry matter), incubation time (4-12 h), incubation temperature (35-55 oC) and tempering water pH (4.0-6.0) on hulling efficiency were optimized using response surface methodology. A quadratic model satisfactorily described the hulling efficiency with high value for the coefficient of determination R2 (0.92). It predicted a maximum hulling efficiency of 84.24% at enzyme concentration, ...

Protein deficiency is a major dietary problem facing the world today, particularly the underdeveloped and developing countries. Protein malnutrition is a serious problem in India due to cereal based dietary pattern. Therefore, various preparations based on cereal-pulse combination are of paramount importance to improve the protein quality of Indian diet. Protein rich cookies can be prepared from composite flours such as wheat flour fortified with soy, cottonseed, peanut or corn germ flours. Peanut are probably the most important oilbearing seed in the world, and rapidly becoming a valuable source of plant protein.

A study was conducted to assess the microbial load on lemon and mango fruits at different post harvest handling stages. After harvesting, there are six different post harvest handling stages were identified and they are collection, grading, packaging, transportation, wholesaler and retailer stages of different fruits. And it was found that the microbial load was suddenly increases at Transportation stage and after it the microbial load continuously increases at subsequent stages i.e. at wholesaler and retailer level. Not only plant pathogenic microorganisms but also the human pathogenic microbes such as E.coli, Salmonella etc. were also found on the surface of fruits which were not found before the transportation stage. Some soil microbes such as Mucor, Rhyzopus, Aspergillus spp. were also found on the surface of fruits. Before the transportation stage, microbes which were already present on the surface of fruits, able to grow at normal growth rate but at and after the transportation stage microbes grow at doubling or tripling growth rate. Not only this, newer kind of microbes were also identified. And it might be due to mishandling of fruits as well as during transportation, some agricultural and non-agricultural products are transported along with the fruits.
