The main purpose of the study was to propose a framework to match the competencies of hospitality... more The main purpose of the study was to propose a framework to match the competencies of hospitality graduates with the expectations of hospitality industries in Ghana. The study adopted a qualitative research approach. Overall, 12 educators (five heads of departments and seven lecturers) were purposely selected from five (5) Technical Universities through a forum via Zoom to discuss the outcomes of the study in proposing the framework. The instrument used was a semi-structured interview guide. Thematic content analysis was used to analyse the data collected. The study results revealed that most of the educators, 10 (83.3%), were females and had worked for more than ten (10) years in the hospitality academic setting. The study revealed that there exists a gap between hospitality educators and the hospitality industry in Ghana. Phenomenology design was employed for the study to collect data from final year 2020/2021 B-Tech Hospitality interns who were doing a four-month internship programme. Semi-structured interview was used and validated through peer review and re-reading. The study revealed that interns were unaware of sexual harassment policies and were not given any form of sexual harassment orientation prior to their posting. The study further established that interns experienced sexual harassment at their various work places but refused to report any of the cases. Additionally, the results of the study have brought to the fore that uniforms worn by interns, their youthful ages and their attractiveness were major causes of sexual harassment of hospitality interns. The study assessed the factors that account for high rates of labour turnover in the Hospitality ... more The study assessed the factors that account for high rates of labour turnover in the Hospitality industry (hotels) in the Sunyani Municipality of Ghana and sought to ascertain the rate of turnover, identify factors accounting for it and suggest solutions to address them. Eight outstanding hotels in the grades of: two budget hotels, two 1-star hotels, two 2-star hotels, and one 3-star hotel in the study area were selected. Purposive sampling Technique was used to select 106 management and staff employees who were willing to respond to the questionnaire. The results revealed that some departments of the hotel industry in Sunyani were more prone to turnover than others. The front-office, accommodation and food and beverage departments recorded more employee exits than administrative departments. It came to the fore that the causes of high level turnover rates was due to dissatisfaction with pay levels, poor reward and compensation (remuneration) systems (44%), poor employee management ...

Service quality and customer satisfaction have been identified as key elements of the service-profit chain. A mixture of an exploratory and descriptive research designs were employed to study 250 respondents. Data was analysed using statistical tools such as the Statistical Package for Social Sciences (SPSS). The study revealed that all the service quality variables (tangibles, reliability, responsiveness, assurance and empathy) were positively related to customer satisfaction which indicates the higher the service quality, the higher customer satisfaction. The analysis of respondents’ expectations scores suggested that the most important expectations items were “accurate bill (3.18)”, “clean rest rooms (2.94)”, “clean, neat and appropriately dressed staff (2.46)” and “clean dining areas (3.34)”, which fall under the dimensions reliability and tangibles.
