In this chapter, which is part of the book “Edible Identities: Food as Cultural Heritage” publish... more In this chapter, which is part of the book “Edible Identities: Food as Cultural Heritage” published by Ronda Brulotte and Michael Di Giovine in 2014, Professor Clare Sammells argues that the integration of particular cuisines, like the French and the Mexican ones, in the UNESCO’s List of Intangible Heritage is a crucial and peculiar part of the very process that generates “haute traditional” cuisines. In this process, “local” and “cosmopolitan” elements of various cuisines blend and merge together, actively creating links and connections across the divides that separate these two categories, giving birth to cuisines that can be at the same time “haute” and “local”. Through formal rituals, such as the international recognition as Intangible Heritage conducted by the UNESCO, different national food practices are transformed into cuisines, recognized and appreciated at an international level.

The upheavals that took place in Saint-Domingue between 1791 and 1804 are sometimes considered as... more The upheavals that took place in Saint-Domingue between 1791 and 1804 are sometimes considered as a secondary event in the study of Modern History, neglected in favor of the other two milestones of the “Age of Revolutions”: the American declaration of Independence and the First French Revolution. Although it is occasionally disregarded, the Haitian Revolution represented a crucial turning point in history as its many primacies testify: in 1492 it has been the first hub of the Spanish Empire settled by Columbus in the New World, then in 1804 it became not only the first independent country in Latin America of the Modern Era, but also the first independent State to be founded and ruled by former slaves. Its significance resides also in the reach that the Revolution had outside its national borders, in the Western hemisphere and in the Atlantic world. The purpose of the present paper, besides highlighting the importance of this momentous event, is two-fold. Firstly, by tracing and following the history of the Haitian Revolution within a global perspective, it aims at demonstrating how some ideals and principles, namely those derived from the Enlightenment revolutionary ideology, were re-articulated and reshaped within the Atlantic colonial world in response to specific changes and needs. These peculiar reformulations were undoubtedly the product of local historical and social circumstances, but their impact went beyond their short-term effects: one of the major consequences of the Haitian Revolution were, in fact, considerable migratory flows towards America and Europe. The second aim of the present work is, thus, to analyze the entity and consequences of these migrations - and of the Revolution itself - focusing on the renewed and reinterpreted ideologies that they put forward, and on the effects that these latter have had on the creation of the American identity, and on important historical events like the American Civil War and the successive abolition of slavery.
