The suitability of world areas for viticulture is evolving due to climate change, with new challenges linked to the sustainability of production. Viticulture and the wine sector in general are, at the same time, impactful sectors associated with negative environmental externalities. The VIVA certification program is focused on the sustainability performance of the vine–wine supply chain in Italy. It comprehends four scientific indicators, called “Air”, “Water”, “Vineyard”, and “Territory”. The Air indicator expresses the impact that the production of a specific wine and / or the company activities have on climate change. Multi-case-study research conducted in some rural villages of Argentina and Italy is intended to ... more Multi-case-study research conducted in some rural villages of Argentina and Italy is intended to propose a model of analysis and monitoring of the “collaborative processes” which stands behind the tourist enhancement of local assets. Based on the definition of “collective impact”, three main issues are analyzed: (1) the shortage of social capital, typical of some contemporary rural areas as a social problem; (2) the commitment of actors from different sectors to the common agenda of tourist development; (3) the structured form of coordination driven by extra-local organizations and programs, aimed at fostering sustainable tourism in rural villages. These issues are developed into key concepts used for the comparative description and analysis of the cases and for the definition of a common model of measurement and monitoring of the ongoing development processes. In particular, aspects concerning labelling and presentation of designations of origin, which, in turn, mirror different regulations of production methods, are considered. Consumers’ preference can allow enterprises to complying with more restrictive rules and sustain higher costs for differentiate their products and achieve higher quality. When choosing a product, consumers do not evaluate each single quality factor but the product as a whole, therefore the analysis has to be done with a methodology considering both the combination of all characteristics of the product, and the contribution of every factor to the creation of value for consumers. O presente artigo analisa a orientação deles ao mercado, testando a hipótese de que a procura por outras possibilidades de venda poderia aproveitar a relação que eles já construíram com os consumidores, adotando uma abordagem de marketing de relacionamento. Three types of roasted chestnuts were obtained by roasting fresh nuts, by roasting frozen nuts or... more Three types of roasted chestnuts were obtained by roasting fresh nuts, by roasting frozen nuts or by heating pre-roasted and frozen nuts. A consumer expectation and liking test was carried out on roasted chestnuts in absence of information about the product processing (blind test), and after information was given (labelled test). Before the test, a questionnaire was presented and demographic and psychographic data were collected. In the blind test consumers expressed the same liking score toward roasted chestnuts from fresh and frozen nuts and a lower preference score toward heated chestnuts from pre-roasted and frozen nuts. A negative disconfirmation of the expectation (products worse than expected) was observed for roasted chestnuts from fresh fruits (traditional products) whilst a positive disconfirmation (products better than expected) for non traditional products. The information on the type of product enhanced the liking toward the traditional product (positive assimilation) and depleted the liking toward non traditional products (negative assimilation). The tendency of chestnut consumers to deplete their liking toward non-traditional products is less than that to enhance it toward the traditional product. The expectations and liking toward both traditional and non-traditional products were positively correlated to consumer age. Younger consumer showed a lower assimilation for roasted chestnuts from frozen nuts only. The product knowledge was negatively correlated to the liking of roasted chestnuts from frozen nuts and the attitude toward innovation was positively correlated to the expectations and the assimilation of information toward non traditional products.

Although, an overall rejection of the concept of " nano wine " is evident, low acceptance scores disguise a somewhat more open attitude to specific applications of the technology. In particular, consumers appear more receptive to applications that enhance certain wine attributes. Practical implications are discussed.

Based on the research activity within the ISLE International Sustainability Network, this paper r... more Based on the research activity within the ISLE International Sustainability Network, this paper represents a step forward aiming to find some contacts points in the experiences some international cases (USA, Brazil, Italy and France) have grown in the development of agritourism in mountain contexts. Despite the singular differences and the national specificities, agritourism is generally considered a particular form of social innovation in agriculture and rural development of mountainous areas, aiming at recomposing the natural and the human dimensions within the framework of a new sustainable way of doing agriculture. At the basis of the research is the hypothesis that agritourism operations are slowly and gradually shifting towards a new perspective/model. Some years ago, agritourism was traditionally viewed as a way for farmers to integrate or diversify their incomes. Nowadays instead—as the diversity of practice has grown and new values have emerged—the range of farmers’ motivations has become much broader. Some of these motivations include not only economic issues but also social, environmental and cultural ones, while addressing a more comprehensive idea of community-based and sustainable development. Case studies from South Carolina (USA), from Italian mountain regions, from Santa Catarina State in Brazil and from France are illustrated in which different innovation perspectives are highlighted.

The main results are synthesized into a bidimensional plot, where the x-axis represents the “integration” dimension and the y-axis the “coordination”. Each village is then represented as a point of the Cartesian plan. The final idea is to use the model to monitor the processes within each different rural village and to measure the changes over time.
This article examines the relationship between “rural peripherality” and “tourism transition” to ... more This article examines the relationship between “rural peripherality” and “tourism transition” to describe the ongoing transformations within the tourist supply in rural areas, highlighting the importance these concepts are acquiring in both the theoretical debate and the formation of policies. Based on the classification of peripheral areas provided by the Italian Strategy for Inner Areas, the authors have undertaken a detailed statistical analysis at the municipality level, considering tourism as an important driver of socio-economical change. A model of governance based on “transition management” is put forward as a practical tool to guide these processes. A case study conducted through participatory action-research offered the opportunity to overcome existing governance practices and experiment with more adaptive methods to manage the transition.
This article highlights how the concepts of ‘tourism transition’ and ‘peripherality’ are related ... more This article highlights how the concepts of ‘tourism transition’ and ‘peripherality’ are related to each other allowing the authors to describe the ongoing transformations within the tourist supply in rural areas. These same concepts are acquiring growing importance both from a theoretical and empirical research perspective as well as in the formulation of a broader policy framework. The case of the National Strategy for Inner Areas (NSIA) in Italy is a clear example of how policies aimed at producing territorial cohesion are shifting their focus from the gaps and relations between regional levels to those between sub-regional levels. The classification of inner areas into peripheral and ultra-peripheral municipalities provided by the Strategy offered the opportunity to undertake a detailed statistical analysis of the tourist supply dynamics at the municipality level, which revealed differences and similarities through several clusters. In this context, mainly characterised by a growth in beds and accommodation, tourism is interpreted as a key factor in the new activation of local resources. This process, however, can only be triggered by the involvement of local actors. As a case study carried out in an Italian periphery has underlined, research-action methodology may provide a useful means to confront these changes and to implement new approaches, which focus on integration and the collaboration between stakeholders.
Nel tentativo di gestire quel delicato equilibrio tra capitale naturale e sviluppo socioeconomico... more Nel tentativo di gestire quel delicato equilibrio tra capitale naturale e sviluppo socioeconomico, le aree fragili si ritrovano oggi investite da profondi cambiamenti che le collocano nel limen del "non più e non ancora". Soggette a transizioni di crescente complessità e quasi liberate dallo stereotipo della marginalità, non alimentano più soltanto immaginari legati al degrado e all'abbandono, ma iniziano a porsi come luoghi del possibile. Come spazi a partire dai quali si può sperimentare un modo altro di "fare sviluppo". Le sfide giungono dall'economia leggera, dalla riqualificazione dei patrimoni, dalla conservazione attiva del paesaggio, dal turismo lento, dalle filiere alimentari di qualità. Coglierle appieno dipende dalla capacità delle persone di fare comunità di progetto dentro, fuori e oltre i confini territoriali. A partire da questo scenario, il volume può rappresentare uno strumento di analisi e di lettura delle dinamiche insite nel cambiamento e di come queste stiano incidendo sulla percezione dei luoghi, sulla loro fruizione, sulle risorse che possono mobilitare, sulle interconnessioni che possono sviluppare.
